Default Ordering some Hatch Chile

I was throwing out some ole spices today and found some "Hatch Extra Hot"
and Dixon Medium Hot" which I had purchased too many years ago from The
Chile Shop in Santa Fe. http://tinyurl.com/273obv

Initially I had bought it from the shop when I was in Santa Fe too many
years ago to recount, and then by mail on my next order. I wanted to order
Chimayo last time, but they said that it was not available anymore as no one
in the valley can afford to be farmers. I am wondering does Chimayo require
farmers' to produce it, whereas Hatch does not? Or does Hatch just buy from
local small gardens?

Also I'm a bit concerned about receiving last year's crop, so does anyone
know which month 'might' be best to order.

I saw a recipe using Dixon in a cake, and thought I'd try it. But looking
online, I can't seem to find much out about it.
I'll be ordering some Hatch medium hot, as well as Dixon medium hot. I
wonder the difference. I can't seem to recall the difference now.
Basically I was using it to make "red chile sauce."

Hi Dee,
Start here. http://www.nmchili.com/ I was looking at the site a couple of
days ago and they indicate that now is the time to order for this year's
crop. My daughter is in NM for a year and I wanted to send her to Hatch to
look around. Currently she is buying from a little old lady alongside the
road who sells the peppers by the burlap bag.

Thanks, Janet. I'm glad to know that this is the time to order for this
year's crop. (Hope all last year's is sold out ;-) )

I'll be picking up a few pounds of ground Chimayo chile this weekend since
I'll be in Taos, Espanola, Chimayo, and Sante Fe. There a few roadside
farm stands by the side of the road in Chimayo where I buy my supply for
the year.
