I was throwing out some ole spices today and found some "Hatch Extra Hot"
and Dixon Medium Hot" which I had purchased too many years ago from The Chile Shop in Santa Fe. http://tinyurl.com/273obv Initially I had bought it from the shop when I was in Santa Fe too many years ago to recount, and then by mail on my next order. I wanted to order Chimayo last time, but they said that it was not available anymore as no one in the valley can afford to be farmers. I am wondering does Chimayo require farmers' to produce it, whereas Hatch does not? Or does Hatch just buy from local small gardens? Also I'm a bit concerned about receiving last year's crop, so does anyone know which month 'might' be best to order. I saw a recipe using Dixon in a cake, and thought I'd try it. But looking online, I can't seem to find much out about it. I'll be ordering some Hatch medium hot, as well as Dixon medium hot. I wonder the difference. I can't seem to recall the difference now. Basically I was using it to make "red chile sauce." Too many questions. Dee Dee |

My daughter is in NM for a year and I wanted to send her to Hatch to look around. Currently she is buying from a little old lady alongside the road who sells the peppers by the burlap bag. Janet |

Unless you've got a lot of money, when you see the prices on http://www.nmchili.com/order_frozen_chile.htm you'll be inspired to grow your own. > Janet --Bryan |

I'm glad to know that this is the time to order for this year's crop. (Hope all last year's is sold out ;-) ) You won't believe how old mine is - I'm ashamed to tell, but I will just to humiliate myself. August 1996. Dee Dee |
