MCINL: I buy them deveined.

We're so far from the ocean here that all shrimp are frozen when they
reach Michigan. I'd rather defrost them myself and know how long
they've been sitting around defrosted than buy them already defrosted
and not know.

I can get them IQF, deveined, with or without shells. The last batch
I
got without shells, because I suddenly took a dislike to Asian-
produced
seafood, and could only get the Gulf of Mexico shrimp peeled.

The Gulf waters might be no cleaner than Asian waters, but at least
it's AMERICAN filth, by gum.

Deveining fresh, raw prawns made easy!

Once you've shelled and removed the prawn head:-
Insert a sturdy toothpick or skewer through the middle of the back of
the prawn/shrimp (at right angles to the body) about 3-5mm beneath the
surface.
Gently lift the toothpick upwards and the whole vein comes out
smoothly and easily.

I've had shrimp that was not deveined and it did not affect the taste.

It affected the texture.

I do SO hate crunching down on Sand!!! :-(

I do often purchase it already done, but I've deveined it on numerous
occasions myself.

It's not exactly hard to do. ;-) Just a bit tedious.

BTW, where were you last Sunday. My wife and I cruised the Hot Sauce
festival looking for a guy in handcuffs pinned to the ground by cops.
Saw nothing like it.

So we started yelling "Steve Wertz, Steve Wertz! Here's your hat!"

The crowd fell silent and glared at us, the band(s) stopped playing, and
a mob chased us from the park. My god, Mr. Wertz, what did you do to
provoke such a reaction?

I'm beginning to sound like a broken record on this subject.
What bothers me is seeing the vein on the bottom after the top has been
deveined. If one wants to get it off, as well, hey you've bot butterflied
shrimp.

by googling it. I probably found out, but have forgotten.
I guess I can't get it out of my mind. I don't want to google again, I just
want to talk about it ;-))

When we were doing the counter-tops and didn't have a kitchen, I used a cup
of noodles that had some dried shrimp in them. The veins were so
prominent -- Disgusting! Yes, I picked them out. Cuppa noodles.

Ugh. The house salad at a pub style restaurant I used to go to
often consisted of iceberg lettuce with tiny cold shrimp and
hard boiled egg on top. People just loved it. I couldn't get past
the 'vein' they never bothered removing. I know they were just
little salad shrimp, but I won't eat that part. Yuck.

We used to go clamming when we lived in California.
We got razor clams and mom and dad would put them in the refrigerator
and sea water and leave them for a day. There would be quite a bit of
sand in the bottom of the container when they were done.

I am anal about deveining. My shrimp are almost butterflied when I get done
with them. I can't imagine what it's like for those people who bite the
heads of their crustaceans. Yuck!

That's an idea.

It helps to have an absorbent surface on which to deposit
the veins, so they'll stick and come away from the implement
you're using to remove them from the shrimp.

The tablecloth, for instance.

The only time not to bother is if you know the shrimp
are all from the same school and the first few are totally
clean. But if one is dirty, then they're all likely to
be dirty, having fed on the same cloud of plankton just
before capture.

Dirty shrimp veins are rather visible.
It's not like you cannot see them in a raw shrimp.

Slightly dirty shrimp veins can be occluded by the flesh,
and by the shell if you're hoping to cook something shell-on.

Almost always, the entire school will have the same quantity
of poop in their chute, so checking a few may make the decision
for you.

Ah, ok. See, I almost never cook shrimp shell on.
My favorite way to cook them is shelled, deveined, then quickly sauteed
in butter, olive oil, salt free lemon pepper and just a little garlic
powder. I stand over them and mix them gently until they are just all
evenly pink, then serve, usually as a side dish or added to a salad.

I will also sometimes lightly dust wetted shrimp with spiced corn starch
and deep fry. I time those carefully to prevent over-cooking!

I keep hearing that "it's better to cook shrimp shell on" but it's such
a MESSY PITA to eat them that way!

And I don't see that it has any benefit unless I guess you are steaming
them.

But around here, they do sell "easy peel" shrimp like Steve W. mentioned.
They are shell on and pre-deveined and are not terribly high in price.
