Default Trumpet Mushrooms what I did

I took Bob Terwilliger's idea and put them in scrambled eggs.

First I cut them in half lengthwise. I later cut into smaller pieces

I took a taste of the mushrooms to see what they taste like, and to
determine which cheese would go good with them in the eggs. I decided
on Manchego.

Cooked up and topped with cheese.

Plated and dusted with some freshly ground grey salt and served with a
hot flour tortilla. mmmmm

I am not a mushroom expert, nor do I play one on t.v.
I like these very much. They have a meaty texture and a mild clean
mushroom flavor.
I don't think I'd go with a cheese any stronger than the Manchego with
them, they could be overpowered easily.
At first I thought I'd sauté them and top a grilled steak with them
but they are too meaty for that. My thoughts are that they are a good
meat substitute.

Now I wish I would have bought another carton of them .

As a result of your posting your pictures of the mushrooms, and before I saw
your pictures of the dish you cooked, I found these mushrooms at a
supermarket/grocery today. Too bad I didn't buy them, but I'm encouraged to
buy them next week and try what you showed. I have manchego here awaiting
guava paste which is nowhere to be found, so it might as well go with the
mushrooms and a nice glass of wine.

I'll be going to the 'big city' in a while so I'll be searching the Hispanic
markets. There are two here in the little town nearby where I live. One of
them didn't even know what guava paste was, shameful :-)

If you can't find any guava paste let me know I'll send you some. At
the cookin' we had the manchego with quince paste. If you are
interested I could send some of that also.

That's sweet of you; thanks. With DH's travels up to CT and back, we're
bound to find some eventually. I've never seen the quince paste; sounds
really delicious. Was it Goya?
You can be sure I'm going to do a little hoarding on these products.

Y'all ask the Hispanic grocer for membrillo paste.
It'll be right next to the guava paste.

That's a lovely picture. They grow around here, 3 types, white, pink, and
red, with corresponding fruit interiors. The red flower is just freakin'
bewyutiful!
We had the manchego & quince jelly bites up in Alb~ cook-in. The paste, or
better, jelly, is not as sweet as it looks. We think they called those bites
Romeo&Juliets, but we dinnt rilly know. We called 'em that anyways.
