LOL I have to agree. Sheldon bitches about people not people grinding their
own beef and sausage. But if you buy frozen ground beef patties you really

But, don't become Omaload and pretend stores in other places are identical
to yours. There *are* stores which grind their own meat correctly, and you
can trust the stuff.

food store.

Actually ALL preground meat is contaminated by default... it's an
utter impossibility to mass produce clean ground meat... that's why
for many years now the warning to cook preground meat well done. The
only way to produce clean ground meat is to grind it yourself, then
you can eat it rare, even raw if you like. Preground meat is a
relatively new concept, didn't exist fifty years ago. Fifty years ago
there were an awful lot of very poor folks stretching their food
budget by feeding their family ground meat dishes, but they all ground
their own or occasionally would have the corner butcher shop do the
grinding (but then meat arrived at the butcher as full sides and
butchered on premises, the meat was clean and dry). Back then there
were an awful lot of corner butcher shops and practically no grocery
stores sold meat, and there existed very, very few stupidmarkets, none
of which sold meat. There were so many independant butchers in town
that they couldn't afford to cheat their customers or they'd be out of
business, immediately if not sooner. But then as now there is only
one way and one way only to have clean ground meat, grind your own...
and still you need to know how to grind meat correctly, but even
pointy headed imbeciles like yoose can learn... the much more
difficult part is how to overcome your gross LAZINESS!

Preground mystery meat is a very bad concept... everyone has been
warned, and warned on a daily basis... anyone who eats preground
mystery meat does indeed deserve whatever ailment befalls them.
Tobacco kills yet people still partake... I see no difference
whatsoever between consuming tobacco and consuming preground mystery
meat... in fact the preground mystery meat consumers are far dumber,
because inexpensive home meat grinders are readily available.

one quick giveaway.

As an experiment, you could take a "100% USDA choice chuck" Original
Bubba Burger, place it in a skillet along with patty of chuck that
you've ground and formed into a patty of similar size and weight. Put
the skillet on a burner, turn on the heat and watch what happens.
You'll likely see a pool of water forming around the frozen patty, well
before any fat or significant moisture starts rendering from your
homemade patty.

Try the nominally better frozen burgers, from Costco and other suppliers
(including the Costco ground sirloin), and you'll probably see the same
effect of water pooling before anything else.

The only frozen patties I've found that don't have appreciable amounts
of water in them have been from Coleman and a couple of local markets
that use local meat processors, and they're certainly more expensive
than the "Bubba Burger" patties and their ilk.

I suspect that the purveyors of frozen beef patties add water not just
to pad their weight, but possibly also to help cook the patties by
steaming. This would be an easy way to decrease the possibility that
the meat would be dangerously undercooked, lessening the manufacturers'
exposure to food poisoning lawsuits and the like.

That certainly seems reasonable. If the muscle tissue is more
waterlogged on the hoof, it would probably continue to be so after
slaughter and processing. If the "farm" and feed lot diet for typical
beef cattle encourages water retention, their meat wouldn't be
considered "enhanced" or otherwise adulterated by USDA standards, but
the price per pound yield would be enhanced, all else being equal,
compared to cattle that are raised and processed by other less intensive
means.

Check the results for yourself. You can put a frozen Coleman burger and
a Bubba Burger in a skillet next to one another, turn on the heat, and
observe which starts to exude water (vs. fat) first and in the greatest
quantity during cooking. It will be the Bubba Burger every time, from
what I've seen. How the additional moisture gets there may be
debatable, but the fact that it's there with many if not most frozen
burger patties, is pretty simply demonstrated, at least in my
experience.
