They added chicory, a vegetable and easy to grow, to stretch the real
coffee and that combination has its own following.

| What exactly does chicory do for coffee?

I've heard many reasons it was added - was told it cut the bitterness of
cheap/less-than-great roasts, stretched the coffee so you would get more
from less beans (by adding in cheap grass), and that it is a flavor booster
to just plain coffee. Our Brit neighbors were surprised to find us drinking
a coffee cut with chicory (she did during WWII only because that was how it
was sold). Take a look at http://www.frenchmarketcoffee.com/chicory.html for
another explanation. It sounds like chicory lowers cholesterol, lowers blood
sugar, lowers your weight, cures diabetes, and the common cold ;-)

Aside from the marketing hype, the French Market brand (and to some extent,
the Louzianne brand - just not as good/rich tasting as FM) is rather strong
coffee (we use three heaping measures to 12 cups drip) and more to my liking
than any other coffee I've tasted. I've traveled all over the world and
loved the strong coffees of Venezuela and Argentina (two places I thought it
was the strongest), learned the hard way in Istanbul it really isn't 'good
to the last drop', and on a flight from Manila to Dubai that rich and dark
do not apply to all types of coffee.

If you are brave enough to try it, give it at least 3 tries before giving it
up. It is sort of acquired I think (I used to like weaker coffees like
Maxwell House or Folgers, but got stuck in South America for a couple months
and came back needing the strong stuff). Because you use much less of FM
than you would of Folgers, it really comes out costing less for me.

I think that most of the companies who make coffee with chicory do a
horrible job. Cafe Du Monde (CDM) is the only one I think has a decent
taste. Given my druthers I drink plain dark roast coffee, black and strong.
I don't mind the CDM coffee I get when I go for beignets.

You have to be careful as to the coffee - chicory ratio. Too much and
the coffee is undrinkable. I find chicory gives coffee a rich
"undertaste" - coffee without tastes weak and bitter. It's
indispensable!

chicory [CHIHK-uh-ree]
This relative of the ENDIVE has curly, bitter-tasting leaves that are often
used as part of a salad or cooked as greens. In the United States, early endive
is sometimes erroneously called chicory. Chicory is available year-round.
Choose leaves that are brightly colored and crisp. Store unwashed greens in an
airtight container in the refrigerator up to 3 days. Today's trendy RADICCHIO
is a red-leafed Italian chicory.

Roasted chicory (also called succory ) comes from the roasted, ground roots of
some varieties of chicory. It's used as a coffee substitute, and added to some
coffees for body and aroma and as an "extender." This coffee-chicory blend is
often referred to as "New Orleans" or "Creole" coffee and is a popular beverage
in Louisiana.

Adding chickory to coffee is very common in the south. My understanding is
that the practice orginated in order to stretch coffee further. It does
have some caffiene and makes for a very strong pot of coffee. I grew up on
'coffee milk' made with Community coffee and chickory. My folks still drink
it. It is less expensive but after drinking real coffee for many years, I
find it to taste too strong for my liking.

Don't bother with Starbucks - probably one of the worst coffees on the
market. Bitter and burnt to a crisp.

Just because I live in the Seattle area, is no reason to drink
Charbucks. So, I don't. What I do prefer is Chock Full 'O Nuts French
Roast coffee. An internet seller in CA. sells it to me. Full, rich
flavor, but not burnt. Consumer Reports has done two studies on French
Roast. Each time it came up first. Company used to be a New York
Company, but recently bought out by Sara Lee, which hasn't ruined it yet.

Before I moved to Denmark, I really liked Trader Joe's Bay Blend.
Unfortunately (or maybe not, distance-wise), it tastes horrible
here -- difference in the water, I suppose (I imagine it's the same
reason water filtered with my Brita also tastes awful). I'd found a
few coffees here in Copenhagen which were okay, but nothing that
really flipped my switch. We were in Stockholm one day two years ago
and, when checking out the market (as we always do when we travel),
found a coffee that we both really like, Mocca Sanani from Himalaya Te
& Kaffespecialist at Hötorgshallen (telephone 08/21 88 70).

Lucky for me (even if I don't get to go), my husband is in Stockholm
not infrequently.

My wife for some reason loves Chock Full Of Nuts (yuck). I prefer Maxwell
House French Roast when buying ground coffee. When buying beans to grind
myself, I have always liked chocolate raspberry truffle, brewed and then
served with half-n-half. I've also found a few blends at the local Whole
Foods Market that are very tastey: Black Onyx and Bed-n-Breakfast. I've
been drinking them the past few months.

(later addition)

I noticed, while reading the rest of the thread, that there are alot of
people who are talking Chock Full O'Nuts up. Strange to me, the flavor
of the coffee just seems off to me...

Hmmm. How would you know? After all, you did say flavored coffee beans
and served with half and half. Sort of like a Charbucks customer
swearing that their beans are the best, even if they are only drinking a
double tall with vanilla!

Jim's Organic - tied between the Ugandan and the Sumatra French Roast. The
Costa Rican and Ethopian come in a close third and fourth. I can't recommend
this brand of coffee enough, and I've been pretty snobbish about coffee for
over 30 years.

Preground it is Community Dark Roast. It has a nice rich flavor.
Unfortunately, it's not available in stores too far from Louisiana. You can
pay through the nose on their web site though. www.communitycoffee.com

I'm not enough of a coffee fanatic to buy whole bean coffee very often, let

I usually use a mix of *cheap* Chase & Sanborn (or "Chock full of Nuts') and
any flavored coffee (Raspberry/Chocolate is my favorite)... a mix ratio of
3:1... PERCOLATED!!! ... just a pinch of cane sugar and a few drops of heavy
cream... Mmmmm!!!

I like "Seaport" dark roast coffee. It's similar to "Community" dark roast
without the chicory. I just bought 5 pounds and brought them back from
Houston.

Believe it or not, Wal-mart's 100% Columbian coffee is pretty good. I like
it better than Folgers or Maryland Club, and it's cheaper.

Community Dark Roast does not have chickory in it. Rather, the New Orleans
Blend is the coffee and chickory product sold by Community. (It is a big
company here. I have friends who used to work there.)

Cafe Britt from Costa Rica. It's reasonably priced, it has
the nice dark Central-American roast that I love (although
you can get a lighter roast too), and it's just damned good.

I buy it by the case.

Terra - Cuban shade coffee

Bridgehead - Mexican Fair Trade, it's a dark roast

My wife also insists on buying Starbuck's Verona blend.

I am not what one would call a coffee gourmet. I prefer Eight O'Clock
Bean Coffee. Grind it in the store, keep it in the freezer at home.
Always scrub percolator before the next pot. Seriously considering
getting my own coffee mill, but can't decide between the convenience

I love drinking coffee at Cafe Du Monde but never appreciated the coffee,
itself. I have tried all sorts of coffees and always return to Community
Coffee - medium roast.

Community also has their own little coffee shops called CC's where they sell
gourmet coffee beans. I have tried them but still go back to the medium
roast. I will confess that I absolutely hate the sound of the coffee
grinder in the morning so I tend to gravitate towards ground coffee.

I am no expert, but I've been trying the varieties availlable at Cost
Plus World Market. So far, I've found Guatemallen and Colombian.
Sumatra is allright. Kenyan I find horrible - tastes like daylabor
sweat. I don't remember what my opinion of Costa Riccan was. All
sell for $5.99 US for a 12 oz bag (whole beans)

Am I the only one who prefers the 2 tablespoons per 6 oz cup stuff?

Also, I'm sure I'm the only one without the ridiculous American
disdain for sweetener and dairy in coffee. You can drink black
coffee. You can also eat bread without butter, ice cream without
chocolate sauce, hot dogs without ketchup (er, mustard) and pasta
without grated cheese. But don't be so smuggly superior towards
others who opt for a food's natural condiments.

I had to read this three times to make sure I hadn't read it wrong.
I've stood on enough coffee cart/cafeteria lines to know that's not
true. Cream and sugar, just about everyone. I no longer drink
coffee, but I had it with light cream ... I'd settle for half and
half, but would do without if only milk was available. No sugar
for me.

But there were people, honest to goodness, would use 10 packets of
sugar in one cup of coffee. As in, would you like some coffee with
your sugar? Not so much disdain as does that sugar even melt!!???

Yep. I worked with a former Brit that took 12+ sugars and 3
packets of creamer... It didn't even *look* like coffee when she
was done with it.

(laugh) I really wonder what's at the bottom of an 8 ounce cup of
coffee when they finish the coffee. The sugar can't have melted,
can it?
