![]() "Sheryl Rosen" > wrote in message ... | | What exactly does chicory do for coffee? I've heard many reasons it was added - was told it cut the bitterness of cheap/less-than-great roasts, stretched the coffee so you would get more from less beans (by adding in cheap grass), and that it is a flavor booster to just plain coffee. Our Brit neighbors were surprised to find us drinking a coffee cut with chicory (she did during WWII only because that was how it was sold). Take a look at http://www.frenchmarketcoffee.com/chicory.html for another explanation. It sounds like chicory lowers cholesterol, lowers blood sugar, lowers your weight, cures diabetes, and the common cold ;-) Aside from the marketing hype, the French Market brand (and to some extent, the Louzianne brand - just not as good/rich tasting as FM) is rather strong coffee (we use three heaping measures to 12 cups drip) and more to my liking than any other coffee I've tasted. I've traveled all over the world and loved the strong coffees of Venezuela and Argentina (two places I thought it was the strongest), learned the hard way in Istanbul it really isn't 'good to the last drop', and on a flight from Manila to Dubai that rich and dark do not apply to all types of coffee. If you are brave enough to try it, give it at least 3 tries before giving it up. It is sort of acquired I think (I used to like weaker coffees like Maxwell House or Folgers, but got stuck in South America for a couple months and came back needing the strong stuff). Because you use much less of FM than you would of Folgers, it really comes out costing less for me. |

I don't like the stuff. You have to be careful as to the coffee - chicory ratio. Too much and the coffee is undrinkable. I find chicory gives coffee a rich "undertaste" - coffee without tastes weak and bitter. It's indispensable! -- Best Greg |

In the United States, early endive is sometimes erroneously called chicory. Chicory is available year-round. Choose leaves that are brightly colored and crisp. Store unwashed greens in an airtight container in the refrigerator up to 3 days. Today's trendy RADICCHIO is a red-leafed Italian chicory. Roasted chicory (also called succory ) comes from the roasted, ground roots of some varieties of chicory. It's used as a coffee substitute, and added to some coffees for body and aroma and as an "extender." This coffee-chicory blend is often referred to as "New Orleans" or "Creole" coffee and is a popular beverage in Louisiana. © Copyright Barron's Educational Services, Inc. 1995 based on THE FOOD LOVER'S COMPANION, 2nd edition, by Sharon Tyler Herbst. ---= BOYCOTT FRENCH--GERMAN (belgium) =--- ---= Move UNITED NATIONS To Paris =--- Sheldon ```````````` "Life would be devoid of all meaning were it without tribulation." |

Adding chickory to coffee is very common in the south. My understanding is that the practice orginated in order to stretch coffee further. It does have some caffiene and makes for a very strong pot of coffee. I grew up on 'coffee milk' made with Community coffee and chickory. My folks still drink it. It is less expensive but after drinking real coffee for many years, I find it to taste too strong for my liking. j > |

What I do prefer is Chock Full 'O Nuts French Roast coffee. An internet seller in CA. sells it to me. Full, rich flavor, but not burnt. Consumer Reports has done two studies on French Roast. Each time it came up first. Company used to be a New York Company, but recently bought out by Sara Lee, which hasn't ruined it yet. http://www.easycoffee.com/ "Chock Full 'O Nuts is the heavenly coffee........." -- Alan "If you reject the food, ignore the customs, fear the religion, and avoid the people, you might better stay home." --James Michener |

... > What is your favorite brand of coffee and why > do you like it? Before I moved to Denmark, I really liked Trader Joe's Bay Blend. Unfortunately (or maybe not, distance-wise), it tastes horrible here -- difference in the water, I suppose (I imagine it's the same reason water filtered with my Brita also tastes awful). I'd found a few coffees here in Copenhagen which were okay, but nothing that really flipped my switch. We were in Stockholm one day two years ago and, when checking out the market (as we always do when we travel), found a coffee that we both really like, Mocca Sanani from Himalaya Te & Kaffespecialist at Hötorgshallen (telephone 08/21 88 70). Lucky for me (even if I don't get to go), my husband is in Stockholm not infrequently. ![]() -j |
