Special Corn Bread Recvipe
 
Some years ago, I had a great corn bread recipe, it called for creamed
corn, sour cream, hot peppers and maybe some cheese... I cannot find
it anywhere. Have looked on line at all I can find with no luck..


Any one out there have this lying around somewhere??

I don't have a recipe handy, but what you need to search for is called
"Mexican Cornbread". (I'm not in any way claiming it's authentic
Mexican, that's just the common name for it) HTH

Alan's Green Chile Corn bread

alan, quick breads/biscuts, tested

-----wet stuff-----
1/2 cup sour cream
1 (4 oz.)can green chiles
2 or 3 chipotle chiles in adobo sauce; minced
4 to 6 strips bacon; cooked & crumbled
1 cup shredded sharp cheddar cheese
1 (14 oz) can creamed corn
3 eggs
3 tbsp. vegetable oil
----dry stuff----
1-1/2 cup cornmeal
3/4 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
2 tbsp Sugar; more or less

preheat oven to 400F

Combine wet stuff in a bowl...mix well.
Combine dry stuff in another bowl... mix well.


Add the 2 mixtures together and stir well and immediately pour it into a
Pam Sprayed 9'X9' pyrex pan.

The Idea is to to get it into the preheated oven soonest.

Bake at 400 F. for 40 min or so. Cool in pan for 10 min., then carefully
transfer to wire rack to cool completely.

If you like Alan's you might also enjoy this Chi Chi's corn bread
pudding. The Masa Harina makes all the difference.

Chi Chi's Corn Cake
SUBMITTED BY: Saundra

"Serve this lightly sweetened corn pudding hot or cold."

PREP TIME 10 Min
COOK TIME 1 Hr
READY IN 1 Hr 10 Min

Original recipe yield: 1 9x9-inch pan



INGREDIENTS
1/2 cup butter
1/3 cup masa harina
1/4 cup water
1 1/2 cups whole kernel corn
1/4 cup cornmeal
1/3 cup white sugar
2 tablespoons heavy cream
1/4 teaspoon salt
1/2 teaspoon baking powder



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, beat butter with electric mixer until creamy. Add
masa harina and water and beat until well combined.
In food processor or blender, process corn in short pulses to coarsely
chop. Leave several pieces of whole corn. Stir the processed corn and
the cornmeal into the butter mixture.
In a separate bowl, stir together sugar, cream, salt and baking powder
until well combined. Stir sugar mixture into butter mixture and pour
all into a 9x9-inch baking dish. Cover with foil.
Line a roasting pan with a damp kitchen towel. Place baking dish on
towel, inside roasting pan, and place roasting pan on oven rack. Fill
roasting pan with boiling water to reach halfway up the sides of the
baking dish. Bake 50 to 60 minutes, or until pick inserted in center
comes out clean. Remove baking dish from water bath and let rest 10
minutes. Serve using ice cream scoop or large spoon.
