Here's a super Banana Bar recipe - sorry, I make banana bread & banana
bars, but never made banana cake.

Banana Sour Cream Bars Nancy Dooley

1/2 C. butter 1 tsp. vanilla
1 1/2 C. sugar 2 C. flour
2 eggs, beaten 1 tsp. soda
1 C. sour cream 1 tsp. salt
2 mashed ripe bananas Nuts (optional)

Cream butter and sugar and mix in the eggs, sour cream, bananas and
vanilla. Add dry ingredients. Add nuts, if desired. Pour into a
greased and floured jelly-roll pan (15"). Bake at 350 deg. F. for
18-20 minutes, or until it tests done. Cool in pan on rack; frost
with cream cheese frosting.


Banana Bread Amanda Miller

2 bananas, mashed fine 1/2 tsp. soda
1 C. sugar 1/2 tsp. baking powder
2 eggs 2 C. flour
1/4 tsp. salt 1/2 C. melted butter
3 T. milk

Beat eggs and sugar until light and thick. Add mashed bananas, butter
and milk. Fold in flour which has been sifted with dry ingredients.
Bake at 350 deg. F. for 45 minutes in a regular-sized greased and
floured bread pan. (This recipe works best in 2 or 3 mini-pans. Bake
these for slightly less time at 350 deg. F. - about 20 minutes.)

Both these recipes are really good.

This cake is moist and it takes a lot of bananas.

Banana Nut Bread

1/2 cup butter
1 cup brown sugar
2 eggs
2 cups mashed bananas (6 bananas)
2 cups flour
2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts (I use 1 cup)

Preheat oven to 325 degrees (F). Lightly grease a 9x5 inch loaf pan. In
a large bowl, cream together butter and brown sugar. Stir in eggs one at
a time, mixing well after each egg. Add the mashed bananas and stir
until well blended.

In a separate bowl, mix the flour, baking soda and salt and walnuts then
add to the dry mixture to the wet mixture, stirring just until
moistened. Pour batter into prepared loaf pan. Bake in a preheated
oven for 1 hour and 20 minutes, or until a toothpick inserted into
center comes out clean. Allow to cool for 10 minutes, then turn onto a
wire rack.
