there are much better recipes for cornbread.

REC: Jiffy Corn Muffin Mix Clone
 
Sometimes a recipe will call for a box of Jiffy Corn Muffin Mix.
Here's a clone recipe you can make at home.

This recipe is equal to one 8.5 ounce box of Jiffy Corn Muffin Mix

Jiffy Corn Muffin Mix Clone

Makes 8.5 ounces (equal to 1-box of Jiffy Corn Muffin Mix)
Makes 1-1/2 cups of mix
Makes 6 corn muffins

2/3 cup all purpose flour
1/2 cup yellow corn meal
3 Tbs granulated sugar
1 Tbs baking powder
1/4 tsp salt
2 Tbs vegetable oil

Combine flour, corn meal, sugar, baking powder
and salt. Mix well with whisk.
Whisk in vegetable oil and mix until dry mixture
is smooth and lumps are gone.

To make corn muffins:
Preheat oven to 400F.
Combine above mixture with:

1-egg
1/3 cup milk

Fill muffin tins 1/2 full.
Bake 15-20 minutes
Makes 6 muffins.

Of course there are.

This recipe is the corn bread equivalent of Biskquick. Not the best,
but useful sometimes.

AND, Rusty's formula does not have the trans-fats that Jiffy and
Bisquick STILL HAVE.

Anyone interested in making Southern Cornbread wouldn't be using Jiffy
or a clone, anyway.

According to the nutritional information on the Jiffy box, it has
7g of sugar per serving and 6 servings per box. That's a total of 42g
of sugar.

Granulated sugar is 4g per teaspoon. This recipe contains 9 teaspoons
or 36g of sugar, so this
recipe has slightly less sugar than that listed on the Jiffy label.

I don't care what you call it, Rusty. It's a recipe for cornbread. If you
can put that together you certainly don't need to buy Jiffy mix.

While there may be better recipes on the web, if this is really a
(close) Jiffy clone - I'd be happy with it. I like Jiffy Mix.

I like Jiffy mixes, too. Their fudge brownie mix is rather versatile.
Sometimes I'll use espresso instead of water to make mocha brownies.
Or, peanut butter morsels, white chocolate morsels, chocolate morsels,
various nuts, etc. Spouse likes the banana nut muffin/bread mix and
adds chops walnuts to make mini-muffins. They're so good right out of
the (toaster) oven with butter!

My mother likes the Jiffy corn muffin mix; yes I've had better but also
had worse that was made from scratch. Didn't like the oatmeal muffin mix
or the ones with the artificial 'blueberries' or 'raspberries'. Don't
like banana nut muffins in any case no matter how they are made LOL.
Didn't know they had a brownie mix.
