Default The finished Beggars Chicken...

If you haven't done a chook this way......... you hafta!!


I'd forgotten how juicy and tender the flesh comes out like. I've decided
we're having two of them for Christmas Day. That way I'll be able to get
some of the parts *I* want, and not have to come back to the table and see
a skeleton!!

5lt of Heiney, a 2kg chook, a multitude of baked potatos, a bucketload of
steamed fresh veges......... and the stomachs on legs *still* wanted
dessert!! (Which they knew was on the cards anyway!!)

So the double chocolate (dark and milk) mousse was sacrificed.

So now we open the reds that they brought :-)

Now that looks like a real way to do a chicken. I'm not sure if we
can get the Heiniken keg. Can I substitute a local microbrewery
without affecting the taste of the chicken?

DS & I enjoyed your photos, but we couldn't figure out why there was
paper between the biscuit crust and the chicken. Then we figured out
the story behind Beggar's Chicken and it made sense. :-)

If you look at the captions, it says use Baking paper if you don't have
Lotus leaves on hand.

My local Chinese place doesn't stock Lotus leaves or Lotus root (as
yet!!), but as soon as it does......... :-)


Back before I discovered the delights of Baking Paper, I would have used
aluminium foil.

Beggar’s chicken is said to be a thief’s delicacy. According to Asian
folklore, the beggar stole a chicken from a feudal lord. To stop the
cooking smells attracting attention, the beggar first wrapped the bird
in a lotus leaf and mud from the lotus pond. Fact or fiction, this is
still a legendary dish for your dinner table.

It's *not* a biscuit crust.

It's a salt dough.


Flour+water+salt = dough....... just like a bread dough, but no yeast.


There's no biscuit in it anywhere.

I used to love eating grapes when I was a kid.

Had a 'toe-dip' into wines in the 70's (when I was trying to impress the
lady I was with)...... and went full blown in '93 with the Wynns
Coonawarra Hermitage.

Haven't looked back since :-)

I just don't care for wine. Both of my folks did (mom) and still do
(dad), but I just can't get into it. I tend to drink water and tea...
