Ingredients:

15 g Unsalted butter

1 tbls Single cream

Salt and pepper

Dill

Pumpernickel

2 item Egg

2 item Pickled herrings

Onion

Lettuce leaves
Egg and pickled herring on pumpernickel

Serves 2

1. Spread 2 slices of the pumpernickel with some of the butter.

2. Beat the eggs with the cream, salt and pepper. Melt the rest of the
butter, add the egg mixture and cook over a low heat until the egg is
lightly scrambled. Leave to cool.

3. Spoon the egg mixture onto the buttered pumpernickel and top with
the rolled pickled herrings and onion rings. Garnish with the dill and
serve with lettuce.
