I don't know if they will smoke ok (others say not) but they can still be
used in baking. You'll note a more crumbly texture but otherwise fine for
cassaroles or crumbled in a breadmaker <g>.

I put some Swiss and gouda in the freezer to firm up before smoking them but
I forget to take them out. Are they still any good?

No, when they thaw they will turn into
a poisonous gooey ooze. Call 911 to request
hazmat disposal services. For protection,
it is recommended that you continue smoking,
which will toughen up the lungs against
the ooze, among other things. :-)

You forgot to tell him to set them out in the middle of the street and

Howdy,

There might be some exceptions, but for most varieties, yes,
of course cheese can be frozen, and it is a good way to
store it for longer periods.

All the best,

I have frozen Brie Cheese and it unthaws quite nicely
Hard cheeses get crumbly after thawing and are best used in cooking

Most cheeses unthaw quite well. It is the thawing
which ruins them. Hope this helps! :-)

You may find that the thawed cheese is more likely to crumble, but
otherwise it'll be fine.
