Default Anyone made no-egg mayo?

yes, I know that technically, mayo has egg in it. But what else shall I
call it?

Anyway, I'm trying to find a tasty no-egg mayo. Ideas?

Well, there is tofu mayo on the shelves of natural food marts, Nayonaisse I
believe it's called. It's ok as a sandwich lubricant, but not much else.

This is adapted from Mollie Katzen's NEW MOOSEWOOD COOKBOOK:

Yield 11ˇ2 cups

Time 5 minutes

Tools
* Blender or food processor
* Rubber spatula
* Covered container


Ingredients
* 1 c firm or silken tofu
* 1 small clove garlic, minced
* 1 t good mustard
* 2 t cider vinegar
* 1ˇ4-1ˇ2 t salt
* 1ˇ4 c oil (olive and/or canola)

Blend everything but the oil for a few seconds in the blender or food
processor.

With the blender or food processor running, slowly pour in the oil in a
thin stream. As soon as it is mixed in, turn off the blender and
transfer the mayonnaise to the storage container.

One of the options would be to make a "cooked salad dressing" which is the
original base for Miracle Whip and proceed with the seasonings from there.

Try this and eliminate the egg and increase the butter or oil:

Cooked salad dressing
1 egg
1 c. water
1/2 c. sugar
1/2 c. vinegar
1 tsp. mustard
1/4 lb. butter
2 tbsp. flour mix with water

Mix first 6 ingredients together and bring to a boil. Add flour and water.

Yeah, I've seen that in the US, but they don't have it here. The one
here is made with pea protein, and it just doesn't have that...mayo feel
to it, ya know?

Is it possible to make an emulsion that's darn close to mayo?

Actually, it makes a damn fine potato salad. Most folks who had it
didn't know that it was fake, when I made it.

You can use liquid lecithin (from a health food store) to make the emulsion
instead of egg yolks; it shouldn't take much. And you might need to add
tofu or some kind of vegetable gum to get the right final texture.

Here's a great no egg mayo type sauce, from Simone Beck's book "New Menus
from Simca's Cuisine."


3 Tb. strong creamy mustard, such as Dijon or Maille

1 Tb. wine vinegar

2 Tb. water

1 cup oil--half olive, half vegetable oil (I usually use all vegetable oil)

2 Tb. icy cold evaporated milk

1 tsp. capers, drained

1/2 tsp. salt

Pepper, to taste

Herbs, to taste, such as parsley, basil, tarragon, etc.


Blend mustard, vinegar, and water together in processor. Add oil slowly,
alternating with drops of milk, till a thick creamy sauce has formed. Beat
in capers and any herbs you like. Season with salt and pepper.

I use this just like mayonnaise--it has a great mustardy tang. It's
wonderful on potato salad.

Our problem is also milk...no eggs or milk (or a dozen other things).
Wonder if you can make evaporated rice milk? Or would that just be
pureed rice? ;-)

Most salad dressings that I've found have either egg, dairy or nuts in
them. Those are all out for us.

Hmm, got nuts that can make no-egg mayo by the quart... with Herself by the
gallon!
