I forgot to pack a couple of things when I left daughter's in AZ.
My big heavy thick cutting board and my relatively new ceramic knife set. I do have other knives but I have to have the cutting board. I use it over the kitchen sink for the desperately needed counter space. This was an opportunity to check out the bamboo cutting boards. I stopped by Linens & Things on my way home. They are beautiful, more environmentally friendly and inexpensive. So far I've only used ceramic knives on it. (: The ones I have aren't as pretty as hers, but they are easy on knives and I didn't go into shock when they got their first scratches. I bought a tray at Sur La Table last week to use as a cutting board because I hate those grooves on the periphery... but it's so darned pretty, I hate to cut on it at this point. Maybe I'll use it as a serving try on NYE for something that needs cutting. Bought it as a bread board that could be taken to the table and it's since become my number one cutting board. Cleans up so easily. Dries quickly, too. (: That's because those bamboo boards are primarily an epoxy binder which is hard and quite abrasive. Laminate bamboo cutting boards and flooring is a bunch of hype, there is nothing "green" about epoxy. |

Wonderful board. Bamboo is harder than most hardwoods, but it's also less porous, which begs the question that it might be less germ-friendly. It also is a little tougher on knife edges and I have to steel fractionally more often, but not enough to worry about. All in all, I prefer the bamboo to the hardwoods.
