I use them finely ground when I make poppy seed rolls. The rolls I'm talking about are not dinner rolls, but the ones where the dough is rolled out flat, spread with the poppy seed filling, then rolled up like a jelly roll. When I buy seeds now (from Penzey's or similar), I store in them in the freezer if I don't have an immediate need for them. In fact, they were taken out of hibernation this morning, as I have bagels retarding in the fridge and bialys rising on the table. New recipes for each. I will pass them on if they are successful without tweaking. I have a freezer full of nuts, grains and flours. I just unpacked a big Christmas gift box of nuts, grains and flours (from me to me) that I got from KA Flour. Best place for them. Boron |

I always put my poppy seeds in the freezer in a zip-loc
when I bring them home. I have a poppy seed grinder here too. It makes a huge difference in flavor. I do use whole seeds for seeded rolls though.
