Whole, unground poppy seeds have a very subtle aroma and taste. Every
popyy seed roll recipe I've ever seen or used calls for ground poppy seed.
This not only changes the texture, but really releases the aroma and
flavor. I baked poppy seed and nut rolls for Christmas last year. Both
were delicious.

What you've bought may be old and stale. I have even bought poppy seed
from stores that had a somewhat rancid smell to them.

For the past several years I have ordered my poppy seeds whole from
Penzey's and they are always fresh.

http://www.penzeys.com/cgi-bin/penze...poppyseed.html

I grind my own with a poppy seed mill.

Adding to my own post, the grinder is adjustable, so that you can merely
crack them or you can grind them very fine. I use them finely ground when
I make poppy seed rolls. The rolls I'm talking about are not dinner rolls,
but the ones where the dough is rolled out flat, spread with the poppy seed
filling, then rolled up like a jelly roll. The filling contains the ground
poppy seed, sugar, honey, milk, and sometimes I add a few white raisins.

Mmmmmm......rancid poppy seeds. Do you remember where you got those? I
don't want to have to make my own.

I remember it was in a supermarket.

Years ago, in the East and the Eastern Midwest, it was common to find
either bulk or 1-pound bags of whole poppyseed in the produce section of
many supermarkets and the seeds were very fresh. There was also an
electric grinder where you could have the produce clerk grind the seeds for
you. That's been virtually non-existant for decades.

When I buy seeds now (from Penzey's or similar), I store in them in the
freezer if I don't have an immediate need for them. Likewise with most
anything else that has a chance to go rancid, such as nuts, grains, and
whole grain flours.

I keep my poppy seeds vac-packed and in the freezer. In fact, they
were taken out of hibernation this morning, as I have bagels retarding
in the fridge and bialys rising on the table. New recipes for each. I
will pass them on if they are successful without tweaking.

I have a freezer full of nuts, grains and flours. I just unpacked a
big Christmas gift box of nuts, grains and flours (from me to me)
that I got from KA Flour. Best place for them.

Are you going to provide special education for your retarded bagels?

Absolutely the best place for them. I keep all my nuts, grains, wholegrain
flours, etc., in the freezer. I probably have more stuff like that in
there than I do meats and vegetables.

These come from a local (I think) company and it's a clear package...
looks like the type that hangs on racks and holds ground chili powder.

I always put my poppy seeds in the freezer in a zip-loc
when I bring them home. I have a poppy seed grinder here
too. It makes a huge difference in flavor. I do use whole
seeds for seeded rolls though.

Yes, whole seeds (or lightly crushed, not ground) for seeded rolls. Ground
for making a poppy seed filling.

It will crack them into smaller pieces, but will not grind them fine enough
for those recipes where you want to make a filling with them. Depending on
what you want to make, you may not need the grinder. If the seeds are to
go on the outside surface of dinner rolls, hamburger rolls, etc., you may
want to use them whole or slightly cracked.

OK with all this talk about stale/rancid seeds... I went to my stash
of black sesame seeds which can't seem to "stay" in the refrigerator
and ate a few tonight out of my hand. They were fine. I think it
takes a lot to let seeds go stale.

But they can and do, Barbara. I'm not sure what conditions contribute to
it. Perhaps too warm an environment? Age?
