Hi everyone
Has anyone eaten a 'flower dish' (Gül' Tavaq) in Xinjiang? See: http://the_uighurs.tripod.com/images/UigCuis-0002.JPG If anyone has a recipe I'd be really grateful! Thanks James (in Melbourne, Australia) |

Chop fairly finely, being creative with the resulting shapes. Vegetables can be raw, boiled, or fried. It goes without saying that herbs are added. Dress with vinegar and clarified butter. Add to taste fairly finely chopped meats, as well as spices. Arrange on the platter, paying attention to the colour range: for example, purple onions alongside orange carrots placed near green-white cabbage. The result is a dish resembling a flower made of multicoloured petals. Everything is in your hands and depends on your imagination. Victor |
