Default Finnish Baked Pancakes Recipe

Finnish Baked Pancakes recipe can be found online or printed from

2 eggs
1/2 cup all-purpose flour
1/2 cup buttermilk
1/4 cup butter, melted
1/4 teaspoon almond extract
1/4 teaspoon lemon zest
1/2 cup fresh raspberries
powdered sugar, honey or maple syrup

Preheat oven to 450F degrees. In medium bowl, beat eggs until
frothy. Add flour, buttermilk, 2 tablespoons of melted butter and
almond extract. Beat until smooth. Stir in lemon zest and set aside.

Heat two 8-inch round baking pans in oven for 2 minutes. Divide
remaining melted butter between two pans to coat. Pour batter into
hot baking pans. Bake for about 15 minutes or until golden and
puffed.

Remove pancakes from oven and spoon fruit into center. If preferred,
sprinkle with powdered sugar or drizzle with honey or syrup.
