I have had a hankering to make this soup since that cooking demonstration I
went to in November. I finally gave it a try today because we had half a squash on hand, and the recipe and directions were quite flexible. I put some olive oil in a pan and tossed in some chopped onion and garlic to sweat, then added peeled and chopped squash and a small carrot. After sweating the works for a while I added 2 cups of chicken stock and let it simmer until the squash was cooked. Then I pureed it with my stick blender, adjusted the seasoning and added a bit of fresh grated ginger and some curry powder. The soup is incredible, if I do say so myself. |

Tomorrow will be soup weather here, for sure. I forgot to mention...... add a bit of heavy cream to it before serving. Do not add cream ahead of time or else it will separate. |

Butternut squash soup is one of my very favourites. I love it. Next time try some Indonesian spices and a couple of tablespoons of chunky unsweetened peanut butter added right at the end.
