Default Butternut Squash Soup

I have had a hankering to make this soup since that cooking demonstration I
went to in November. I finally gave it a try today because we had half a
squash on hand, and the recipe and directions were quite flexible. I put
some olive oil in a pan and tossed in some chopped onion and garlic to
sweat, then added peeled and chopped squash and a small carrot. After
sweating the works for a while I added 2 cups of chicken stock and let it
simmer until the squash was cooked. Then I pureed it with my stick blender,
adjusted the seasoning and added a bit of fresh grated ginger and some
curry powder. The soup is incredible, if I do say so myself.

Ooo! And I have a butternut squash sitting around waiting to be cooked.
Thanks for the reminder, tomorrow I'll be making that. Glad your soup
turned out well. Tomorrow will be soup weather here, for sure.

I forgot to mention...... add a bit of heavy cream to it before serving. Do
not add cream ahead of time or else it will separate.

Perfect. I have been known to put a dollop of creme fraiche on top.

Butternut squash soup is one of my very favourites. I love it. Next
time try some Indonesian spices and a couple of tablespoons of chunky
unsweetened peanut butter added right at the end.

Can you eat cashews? Some roasted unsalted cashews tossed through might
do the trick.

Another substitution that might work could be roasted "soy nuts" maybe
(salted or unsalted)?? Just an idea.
