Default REC: Pecan Confections


I had these at someone's house recently and remembered making them ~20
years ago. They are tasty, much like a soft praline. I don't know why
the recipe couldn't be doubled.

Pecan Confections

1 egg white
1 c. brown sugar
1 Tbsp. flour
1/8 tsp. salt
1 c. coarsely chopped pecans

Heat oven to 250 deg. F.

Beat egg whites until stiff. Gradually add combined brown sugar, flour,
and salt, beating constantly. Fold in pecans.

Drop by teaspoonsful on a lightly greased cookie sheet leaving 2 inches
between each cookie.

Bake in a slow oven (250 deg. F) 20-25 minutes. Let cool completely
before storing.
