When I made it, I simply made a white sauce using equal amounts of flour and butter, cooked down, then some black pepper and a bit of salt added. I thinned this down with milk until I got the thickness I wanted, then added plenty of grated sharp cheddar and poured it over my macaroni, mixing well. I sometimes added chopped onions to this. That was the quick version. I've made other versions that had mustard in them and buttered bread crumbs on top and baked in the oven. I've used other kinds of cheese. Some people add eggs. Some people use cream instead of milk. |

I make the baked variety by stirring shredded cheddar into cooked macaroni, the pouring 1 cup of milk with 1 egg into it (along with S&P to taste) then topping with more cheese and panko crumbs. -- -Gina in Italy http://www.myspace.com/ravenlynne1975 I'm a blogger: http://ravenwolflodge.blogspot.com |
