I just recently discovered hearts of palm, very good
in salads! It reminds me of artichokes. My question: what is this stuff, where does it come from? -- Rich |

You win. ;-) >they are great in salads, but I have no idea of what else to use them in. <quoting> Heart of palm, also called palm heart, palmito, chonta or swamp cabbage, is a vegetable harvested from the inner core and growing bud of certain palm trees (notably the coconut (Cocos nucifera), Palmito Juçara (Euterpe edulis), Açaí palm (Euterpe oleracea), sabal (Sabal spp.) and pejibaye (Bactris gasipaes) palms). It is costly because harvesting in the wild kills the tree. Heart of palm is often eaten in a salad, sometimes called "millionaire's salad," and also in vegetarian spreads. </quoting> Ref: <http://en.wikipedia.org/wiki/Heart_of_palm> And, as that ref goes on to say, it's not such a serious matter with the commercial varieties which are self-suckering and produce multiple stems. So harvesting a few doesn't kill the whole plant. You can find a few recipes at the bottom of this page: <http://tinyurl.com/2uv6eg> or try <http://gourmetsleuth.com/equivalents_substitutions. asp?index=H&tid=719> They all seem to be crustacean salads of one sort or another (but I didn't check out the "view more recipes" link). Cheers, Phred. -- LID |

N. After they're opened and put in the refrigerator, I'll reach into the jar (with a fork, of course) and pull one out and eat it on the spot. Yum! Dee Dee |
