Default hearts of palm

I just recently discovered hearts of palm, very good
in salads! It reminds me of artichokes.

My question: what is this stuff, where does it come from?

I am thinking it is the center of a flower of a palm... but I bet I am
wrong... they are great in salads, but I have no idea of what else to
use them in.

And, as that ref goes on to say, it's not such a serious matter with
the commercial varieties which are self-suckering and produce multiple
stems. So harvesting a few doesn't kill the whole plant.

They're pretty good just as an antipasto item, served with mini
toasted bread rounds or crackers.

After they're opened and put in the refrigerator, I'll reach into the jar
(with a fork, of course) and pull one out and eat it on the spot.
