Buffalo, the endangered red meat?

TJs doesn't carry it anymore.

Whole foods had it in the butcher's back fridge in frozen burger cases but
none out in the public cooler cases.

I haven't been to my third supplier yet.

Are all you foodies eating more buffalo recently?

Andy, perhaps it's a seasonal supply kind of thing for the buffalo
meat? Since I have no experience with buffalo meat, so I know nothing
about its supply & demand. Have you asked the store managers why there
isn't any in stock?

Sky,

I think it's more than likely that most folks don't know buffalo so it
doesn't sell well.

Shame. I'd love to be the first to treat you and your husband to free
range, no antibiotic, no hormone super-lean buffalo filet mignons, if you
haven't already had them.

Actually, a lot of us like buffalo (disclaimer - in the U.S. it's
probably bison meat). ;-) It is hard to find and there seems to be
a difference in meat flavor depending on where the herd is being fed.
I don't know if there are any "feed lots" for bison, but I suspect
not. Interestingly, a quick web search on bison meat turns up quite a
few sources for mail order. It's relatively expensive... about $5.00
a pound for bison burger and $10.00 a pound for bison steaks. Part of
that is due to the demand for bison meat far outstripping the supply.
(According to one of the sites).

Here in Italy the price is much higher than that, speak of 80 euros per Kg,
which amounts to more than 50US$ per pound. And I don't know which cut it
is, but anyway it's a nice difference.

My buffalo supply also comes from Canada. Offhand I forget what I pay,
since free-range (not grain fed), no antibiotic/no hormone buffalo is at
any price, healthier and tastier than grain feed cows packed by the
thousands into corrals laying in their own manure! Same with pig. Grow 'em
fast with hormones, screw their living conditions. Kill 'em, and ship 'em
out.

Buffalo is also so lean it's one of the lowest sat fat protein you can eat.
And you can cook it bloody rare without fear of ecoli, etc. I don't know
why or how but I've had bloody rare buffalo filet mignon hundreds of times
and no ill effect, not once.

Vilco, this autumn the nearby local bufala farm began offering bufala meat
from the excess male calves born last spring. It's a different species, but
I hear that the meat is similar. --

there is the supply/demand part of the equation.
bison require much different fencing than regular cattle
(min.6' 8 wire high tensile electric fencing vs 2 wire 4'
fence) & they can't be stuck in a feedlot. grain feeding bison
will throw their rumen into fits. bison eat grasses, not
grains.
bison are highly excitable & tend to stampede with little
provocation. beef cattle are pretty dim & it takes quite a lot
to get them to stampede, hence the different fencing methods.
i knew of a person in NY who decided to cash in on the bison
meat craze without updating his fencing. the farm is for sale
less than a year later. he's bankrupt & you'll need to replace
all the fences...
yes, the meat will taste different depending on the types of
grasses & the soil composition where those grasses grow.

Good points!

I have had grain fed buffalo and it tastes no better than cow grain fed
beef, plus the addition of antibiotics and hormones.

I thought so. The best bison steak I ever had was in a restaurant in
south central Utah. Great flavor and extremely tender. I had a
"buffalo burger" about six months later in Southern California that
was barely edible. I was told the Southern California bison meat came
from the herds on Catalina Island. The old Wrigley herd.
Incidentally, there was a short item on local TV that said all the
bison have recently been removed form Catalina Island, supposedly for
environmental reasons, but I suspect they couldn't thin the herd and
sell the meat because of the off taste. Guess I'll have to do a more
concentrated search of the Great Plains area (Utah, Colorado, Wyoming,
Montana, Nebraska... ) for bison meat.

We eat buffalo at least once a week at our house. I buy it for less
than $4 a pound at Vitamin Cottage. It's their house brand, and they
get it from the Western Buffalo Company of Rapid City, South Dakota.

doubt that it's been enough to wipe out the species.

It still tastes different from cow, though, assuming your taste buds haven't
been overwhelmed by a constant diet of twinkies covered with Hershey syrup,
then dipped in honey-mustard sauce that you saved from your last visit to
McDonald's.

I do that, too.
