Chicken a la King

3 tablespoons butter
1 cup fresh sliced mushrooms
1/2 cup chopped green bell pepper
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups half-and-half
1 1/2 cups chicken broth
3 cups diced cooked chicken
1/3 cup chopped pimiento

Melt butter in a medium saucepan. Add mushrooms and green pepper; cook for
5 minutes. Blend in flour, salt, and pepper. Continue stirring and cooking
until smooth and bubbly. Gradually add cream and chicken broth, stirring
constantly. Cook for 10 minutes, stirring frequently. If you'd like a
thicker sauce, blend 2 tablespoons of cornstarch with 1/4 cup cold water;
add to sauce, a little at a time, until desired thickness is reached. Cook
for a few more minutes. Add chicken and pimiento; heat through. Serve on
toast points or pastry shells or rice. Chicken a la King Recipe serves 6 to
8.

My mother made them with pimentos, too. The below recipe is an old
family favorite, to which I add pimentos instead of the red bell
peppers out of nostalgia.

Chicken a la King

meats and poultry

1/2 cup mushrooms; sliced
3 tablespoons red bell pepper; finely chopped
2 tablespoons Butter
1 1/2 cups Veloute Sauce
1 cup chicken; cooked, cubed
1 egg yolk; lightly beaten
2 tablespoons dry sherry
2 tablespoons parsley; chopped
salt to taste
Veloute Sauce
2 tablespoons Butter
3 tablespoons flour
1 cup chicken broth; hot
1/3 cup heavy cream
salt to taste
puff pastry; thawed

Veloute Sauce:

Melt the butter in a heavy bottomed pan. Stir in the flour and blend
over moderate heat until smooth. Continue to cook, stirring
constantly, for 2 mins. Add the chicken broth, continuing to stir as
the sauce thickens. Bring to a boil, lower the heat, and cook 2 mins.
more. Pour in the cream, add salt, and heat thoroughly.

Saute the mushrooms and pepper in butter. In a saucepan over low heat,
mix them into the sauce together with the chicken. When it is hot,
add 1/4 cup of this mixture to the egg yolk, beating constantly.
Return the yolk-sauce mixture to the ssaucepan with the sherry,
parsley and salt, and blend well.

Wow, I can't remember the last time I made this -- DH and I
were playing with the steamer one night and came up with this
version, which we served over puff pastry cups:

Chicken A La King

1/2 C. butter or margarine
2/3 C. flour
1 tsp. salt
1/4 tsp. white pepper
2 C. chicken broth
2 C. milk
3-4 skinless, boneless chicken breast halves
3/4 C. sliced carrots, raw
1 large potato, peeled and cubed, raw
1 C. fresh mushrooms, sliced
1/4-1/2 C. onion, chopped
1 1/4 C. cooked peas
2-4 ounces sliced pimentos, drained (optional)

Steam chicken, carrots, and potatoes until cooked through
and tender, reserving chicken broth. Cut chicken into bite
sized cubes; add peas and keep warm. Add enough warm water
to reserved chicken broth to equal two cups. In small frying
pan, melt 1 T. butter or margarine. sauté mushrooms and onions
until tender. In saucepan, melt butter; whisk in flour, salt,
and pepper until smooth. Gradually stir in milk and broth. Bring
to a boil over medium heat, then cook for 1 minute or until
thickened and bubbly. Combine with chicken and vegetables; serve
over toast points, biscuits, rice, noodles, or puff pastry. Can
substitute leftover turkey or ham.

I didn't add pimento -- IMHO, the only place one should find pimentos
is in martini olives... ;-)

No. I just find it amusing to insult people who killfile me. It's

I had him kill filed as Food Snob. He was amusing and attempted to
play nice for a while as Bobo, but he seems to be regressing quickly.

I play nice when I deem it appropriate. I have never taken a break
from insulting the Crisco/margarine folks. Sometimes I compliment, or
otherwise positively respond to a post by one of the folks who has me
killfiled. I'm not negative for its own sake. Some posts merit
negative responses.

Who cares? He had no problem with me until I killfiled him. That
hurt his pride so he's resorted to trying to insult me. I'm just
embarrassed for him at this point -- no dignity...

Not hurt feelings, I just think it's funny to insult people after they
announce that they have KF'd you.
I still really have "no problem with" her. On food related matters,
I'm just as likely to praise one of her posts as I was before, and
won't judge her posts more harshly than other folks' posts. Hey, I
heard this guy named Dr. Walter Willett on Diane Rehm this morning:
He wrote a book called, "The Fertility Diet." On the show, he said
that consumption of trans fats can make it more difficult for women to
get pregnant.
Good news for the gene pool.

"No" is the correct answer. A KF is an invitation to no longer respond
to that person.

Pimentos are a good thing to use when I don't have any red bell pepper.
They add a festive color and some flavor. We seem to have red bell
pepper here all year. Sometimes it is too expensive and I'll just skip
the whole red pepper thing.

Ala King is a leftover dish for us. We roast a chicken or a turkey and
have leftover meat. I like the Ala King better than the roast bird. We
don't really have a recipe. Slice some mushrooms, and cut up green
pepper, red pepper and onion. Saute the vegetables. While they are
sauteeing, make up enough white sauce for the number of people you plan
to serve. Add spices. I use a tiny bit of tarragon (it'll take over if
you add much), a grind of white pepper, a scrape of nutmeg and a few
grains of cayenne. Add salt to taste. Add the vegetables to the white
sauce and let meld for a couple of minutes. Add the cutup leftover
meat. Heat until everything is hot. We serve over toast. I use olive
oil because I like the taste, but butter works also.
