> Mom used to make with pimentos. Anybody have a recipie that they'd like to > share? Thanks guys/gals. > This is one I've used many times, Josh, and I think very good. Chicken a la King 3 tablespoons butter 1 cup fresh sliced mushrooms 1/2 cup chopped green bell pepper 1/4 cup all-purpose flour 1 teaspoon salt 1/4 teaspoon pepper 2 cups half-and-half 1 1/2 cups chicken broth 3 cups diced cooked chicken 1/3 cup chopped pimiento Melt butter in a medium saucepan. Add mushrooms and green pepper; cook for 5 minutes. Blend in flour, salt, and pepper. Continue stirring and cooking until smooth and bubbly. Gradually add cream and chicken broth, stirring constantly. Cook for 10 minutes, stirring frequently. If you'd like a thicker sauce, blend 2 tablespoons of cornstarch with 1/4 cup cold water; add to sauce, a little at a time, until desired thickness is reached. Cook for a few more minutes. Add chicken and pimiento; heat through. Serve on toast points or pastry shells or rice. Chicken a la King Recipe serves 6 to 8. -- Wayne Boatwright ******************************************* Date: Friday, 01(I)/11(XI)/08(MMVIII) ******************************************* I am Homer of Borg. The below recipe is an old family favorite, to which I add pimentos instead of the red bell peppers out of nostalgia. @@@@@ Now You're Cooking! Export Format Chicken a la King meats and poultry 1/2 cup mushrooms; sliced 3 tablespoons red bell pepper; finely chopped 2 tablespoons Butter 1 1/2 cups Veloute Sauce 1 cup chicken; cooked, cubed 1 egg yolk; lightly beaten 2 tablespoons dry sherry 2 tablespoons parsley; chopped salt to taste Veloute Sauce 2 tablespoons Butter 3 tablespoons flour 1 cup chicken broth; hot 1/3 cup heavy cream salt to taste puff pastry; thawed Veloute Sauce: Melt the butter in a heavy bottomed pan. Stir in the flour and blend over moderate heat until smooth. Continue to cook, stirring constantly, for 2 mins. Add the chicken broth, continuing to stir as the sauce thickens. Bring to a boil, lower the heat, and cook 2 mins. more. Pour in the cream, add salt, and heat thoroughly. Saute the mushrooms and pepper in butter. In a saucepan over low heat, mix them into the sauce together with the chicken. When it is hot, add 1/4 cup of this mixture to the egg yolk, beating constantly. Return the yolk-sauce mixture to the ssaucepan with the sherry, parsley and salt, and blend well. Contributor: The Fannie Farmer Cookbook Yield: 2 - 3 servings Terry "Squeaks" Pulliam Burd -- "If the soup had been as hot as the claret, if the claret had been as old as the bird, and if the bird's breasts had been as full as the waitress's, it would have been a very good dinner." -- Duncan Hines To reply, replace "meatloaf" with "cox" |

*That's* Chicken Ala King? I thought I invented that recipe.... minus
the bell peppers, egg yolk and puff pastry, of course. ```````````````` On Fri, 11 Jan 2008 19:14:25 -0800, Terry Pulliam Burd > wrote: >On Fri, 11 Jan 2008 15:39:39 -0600, "Joshuall" > >fired up random neurons and synapses to opine: > >>Mom used to make with pimentos. Wow, I can't remember the last time I made this -- DH and I were playing with the steamer one night and came up with this version, which we served over puff pastry cups: Chicken A La King 1/2 C. butter or margarine 2/3 C. flour 1 tsp. salt 1/4 tsp. white pepper 2 C. chicken broth 2 C. milk 3-4 skinless, boneless chicken breast halves 3/4 C. sliced carrots, raw 1 large potato, peeled and cubed, raw 1 C. fresh mushrooms, sliced 1/4-1/2 C. onion, chopped 1 1/4 C. cooked peas 2-4 ounces sliced pimentos, drained (optional) Steam chicken, carrots, and potatoes until cooked through and tender, reserving chicken broth. Cut chicken into bite sized cubes; add peas and keep warm. Add enough warm water to reserved chicken broth to equal two cups. In small frying pan, melt 1 T. butter or margarine. sauté mushrooms and onions until tender. In saucepan, melt butter; whisk in flour, salt, and pepper until smooth. Gradually stir in milk and broth. Bring to a boil over medium heat, then cook for 1 minute or until thickened and bubbly. Combine with chicken and vegetables; serve over toast points, biscuits, rice, noodles, or puff pastry. Can substitute leftover turkey or ham. I didn't add pimento -- IMHO, the only place one should find pimentos is in martini olives... ;-) -- Jani in WA |

Not hurt feelings, I just think it's funny to insult people after they announce that they have KF'd you. I still really have "no problem with" her. On food related matters, I'm just as likely to praise one of her posts as I was before, and won't judge her posts more harshly than other folks' posts. Hey, I heard this guy named Dr. Walter Willett on Diane Rehm this morning: He wrote a book called, "The Fertility Diet." On the show, he said that consumption of trans fats can make it more difficult for women to get pregnant. Good news for the gene pool. > > -- > Jani in WA --Bryan |
