preserved lemons
 
Clean glass jar- check
Kosher salt- check
Several lemons- check
Dark cool place for storing for 3 weeks- check
Instructions- all except one thing


I know I'm supposed to use unwaxed lemons since the point of the recipe
is to use the peel of the lemon. The trouble is that I've bought lemons
from the supermarket. I don't know if they're waxed. Assuming they
are, how do I get the wax off? Scald them in boiling water?

Warm water and a scrub brush is what I used when I made limoncello. I
don't know if the lemons were or were not waxed but I was going to wash
them anyway.

Give them a good scrub under running water, then don't worry about it.

When apples and lemons are waxed, I generally rinse them off, then wipe
them, spray a little vinegar on them and let them sit 5 minutes, then rub in
my hands, then rinse.

If I were going to use the rind of lemons or oranges, I would add to this
procedure using a vegetable brush.

It's that easy? I was thinking of a complicated procedure. Thanks to
all who wrote. I'll give a report later after I've got them sliced,
salted, and in the jar.
