So.........as part of my job, I'm the lucky person that gets to take 4
students to Thailand this summer. We will be spending minimal time in
Bangkok, most of the time will be in the Kanchanaburi area and in
Chiang Mai - the central plains.

With that in mind - any recommendations for regional speicalities
besides the requisite satay?

A few years ago, there was a PBS show about either Thailand or Cambodia. The
reporter was sampling street food, which included cooked beetles. Obviously,
he had to try them for the audience, and he said they actually tasted pretty
good.

Check out Kay Hartman's posts about Thailand and cooking classes
there. I don't remember exactly how long ago it was.

I've been to Thailand and I don't remember a lot of begging and crying
during my meals there.

As you wrote, you will come to Thailand in Summer. I recommend you to
bring medicine for diarrhea with you. This doesn't mean Thai Food is
not clean, but Generally Thai Food is hot and spice. Unfamiliar with
taste may make you stomachache.

Have a good trip.

If we get time while in Singapore, we were going to do a trip up to
Thailand. If we don't make it, we'll certainly hit this place...

You're very lucky! We've been to Thailand twice. The food is fresh and
great. Go to the storefront restaurants where the owners are visible in
back and order "what's good". You generally won't have a problem. Like
Vietnam, the market food is impeccably fresh and that moves to the kitchen
of the restaurant. The food isn't just spicey; it's subtlely spicey. Some
very good Thai restaurants in the SF Bay Area make you think you're in
Thailand. In Thailand the spices are more varied, and you'll taste things
you don't taste here. Stay at the Marriott across the Chao Phraya river.
Take a free boat ride across to town and walk, and walk. You'll have a great
time. Everybody does.

Kent
