Default cheese

can anyone tell me what white (ish) coloured cheese i can melt in a frying
pan so it ends up runny like milk, i saw it done yesterday but i did not
notice the name of the cheese and possibly could not get it in UK as it was
french but i would like to try to make the dish

what the chef done was fry squares of chicken in a non stick pan until
cooked then put in the bits of cheese he then stirred until the cheese was
like milk at this point he poured in fresh cream and stirred for about 2/3
minutes more before serving with saute potatoes and sprouts

but i dont know what cheese he used oh help

Or processed swiss cheese. Or what about that Laughing Cow brand
greyeure (sp?)
