I've already baked a huge chocolate cake, and have other foods to prep for
a dinner party tomorrow night, so no Lamingtons for me right now. I've
made them before. Delicious! I will make them again.

naaa, the public holiday is on the 28th, the actual date of Australia Day is
the 26th

we do love our public holidays here in Oz

kangaroo steak and a floater from the cart outside the Adelaide casino for
me?

And if you're in Quorn, I left my tripod at the hotel/bar across from the
("Galippoli") train station. Check up on it for me. It's behind the bar,
last I heard.

And wave to the "Big Galah" in Kimba for me?

And thank all the spiders and snakes for not biting me to death!

I have pictures of it at night. All lit up inside. That cart parked there
like it was his private property! Too bad. I remember the record for
floaters was 13. I loved it. That was the designated meeting place for us
to meet up for floaters, planned it two weeks in advance for colleagues
arriving for a conference. "6PM at the cart outside the casino." Then there
we all were.

We went up to the casino and I turned $10 into $50 in a couple hands of
blackjack and quit. I walked out thinking I beat the house in Australia and
lit a fresh Cuban cigar and strutted around smuggly for a few puffs. The
station is also a beautiful sight on the inside from upstairs!

I miss Adelaide! My old boss' family lives there. His parents loved me and
Big Bird #2 at first sight. We were received like royalty. "Would you boys
like a whiskey and a beer?" Darn near adopted us.

She's been away from home *way* too long!!

If I'm feeling lazy, I buy some and we have them with a late night cup
of tea, or if friends are comig over and I feel inclined, I make them
(although mine are never as 'neat' as the bought ones!!).

And I've been to quite a few friends places for visits and they bring
out the lamingtons.

Chocolate crackles and fairy bread are for kids birthday parties :-)

Last couple of batches I've been trying different types of chocolate.
I'm trying to get one with a Swiss chocolate and roasted coconut
coating.

At the moment, they come out with a hard coating. still nice..... but
not the same.

Mum used to make them for our school lunches when we were kids. Every
now and then she'd get bored with making brown or pink ones and make
green, yellow or orange.
