Default This recipe work in crockpot?

Below is a recipe I got from another NG and I was wondering if instead
of cooking it the way it is described below, do you think placing all
the ingredients in a crockpot and cooking for several hours would get
everything cooked and still be tasty? The onion, potato, and celery I
would cut into real small pieces and I am not worried about the
texture being that creamy as long as it is good.

Creamy Celery Soup

Serves 4
Published in: Everyday Food

2 tablespoon Butter
1 1/2 lbs celery (12 to 15 stalks)
1 med onion chopped
1 baking potato (8 to 10 oz) in 1/2" cubes
coarse salt
2 tablespoon lemon juice
6 cup water

Heat the butter in a large (4 quart) saucepan over medium heat. Add
celery, onion, and potato. Season with salt. Cook, stirring
occasionally
until vegetables begin to soften, 6 to 10 minutes. Add 6 cups of
water to
saucepan and bring to a boil. Reduce the heat to medium and simmer
until
vegetables are very tender, about 20 minutes. Working in batches
puree
the soup until smooth. Return to pan and add the lemon juice and more
salt if needed.

Default This recipe work in crockpot?


It looks like a quick recipe (30 minutes cooking time), so I'm
wondering why you'd want to cook it in a crock pot?

Rule of ythumb, 1/2 the liquid for a crockpot then add a bit more at need
once it develops. he recipe below will not be creamy, but watery in a
crockpot.

Yes it'd work just fine in a crockpot. Set it to HIGH with
everything placed inside the crock. Adjust the spices towards end
when you're making the smoothie.
