Does anyone know where to find the Kraft American cheese powder you could
buy years ago that allowed you to make your own "Mac and Cheese" and "popped corn with cheese"? Amazon is selling 3oz cans claiming to be the Kraft product. Kraft doesn't admit they make a powdered American Cheese on their site. Several unknown purveyors are selling powdered cheddar cheese. Has anyone tried these? TIA, Kent |

Unfortunately the powdered stuff is not much better heath wise, both it and real cheese have a fair bit of phosphorus in them. I am still looking for a cheese flavor that does not have a lot of phosphorus. Scott |

Unfortunately, I can't use packaged shredded or grated cheese because an additive that prevents caking also keeps the cheese from melting and coating the macaroni smoothly. You have to grate the cheese from the block yourself. I hate cheese sauces that taste like flour. " A good dish of macaroni and cheese is hard to find these days. The recipes in most cookbooks are not to be trusted...usually it is their vexatious infatuation with white sauce, a noxious paste of flour-thickened milk, for this dish flavored with a tiny grating of cheese. Contrary to popular belief, this is not macaroni and cheese but macaroni with cheese sauce. It is awful stuff and every cookbook in which it appears should be thrown out the window." White sauce is over used in sauces and soups. I often use Kraft mac and cheese. The powdered cheese is an excellent binder. My grated cheddar sticks to the mac and it doesn't taste bad either. I'm not convinced that they rip off *everybody*. Maybe just gift orders, or items that were not in stock when the order was processed. There's really not much risk as long as you don't let them string you along with delays for more than a couple of months. The OP on that thread you mentioned got screwed because the purchase was supposed to be shipped to another address and she didn't find out about it in time. Bob |
