ObOldTimerFood: The "boiled cake" thread made me giggle because long ago
at a cook-in at Ray Bruman's house, Kay Hartman was kvetching that she
"boiled the cheesecake" because she had a new convection/micro oven at the
time and hit the wrong button. Of course it tasted just great.

As she was kvetching, I learned that she had baked chocolate cookies only
to pulverize them for the crust for said cheesecake. So I called her a
slutface. In front of a crowd full of people.

Then I had to explain that it was meant in affection - it was a term in
another group I'd been a part of when someone did something "artistic"
that was so amazing that you temporarily hated them for their talent .
For those of you who know Kay, it totally fits .

Kay kvelled about that, and it went into the story books ("when Charlotte
called Kay a slutface").

I've been making batches of Kay Hartman's truffles lately, so will post my
(annotated) recipe soon.

I still have both of those recipes in my collection, believe it or
not. I haven't made either of them yet... I remember thinking that
it would be nice to have that recipe for chocolate wafer cookies,
cause sometime they are hard to find in the stores..

The lime-ginger tart always looked great to me...

Hmm...might be nice for a southern Cal cook-in.

Jumbo Gingersnaps

Recipe By :Good Housekeeping
Serving Size : 10 Preparation Time :0:00
Categories : Cookies

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 1/4 cups all-purpose flour
3/4 cup salad oil
1/4 cup dark molasses
1/4 cup maple syrup
2 teaspoons baking soda
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cardamom
1/4 teaspoon salt
1 egg
sugar

About 1 1/2 hours before serving or up to 1 month ahead:
Into large bowl, measure 1/2 cup sugar and remaining ingredients.
With mixer at low speed beat until well blended, scraping bowl with spatula.
Preheat oven to 350 degrees. Place 2 Tablespoons sugar on waxed paper.
Shape 1/4 cupful dough into a ball; roll in sugar to coat evenly.
Repeat with remaining dough to make 10 balls in all.
Place balls 3 inches apart, on ungreased cookie sheets. (dough is very
soft; balls will flatten slightly)
Bake cookies 15 minutes. Remove to rack to cool. Store in tightly
covered container to use within 1 month.
Makes 10 cookies
**I liked them much more when made smaller (1/8 cup size) This is a
very soft cookie.

Did we ever figure out who Buffy might be? We seemed to have a pretty
evenly divided love/hate pair of coteries at the time. Personally, I
really got a smile out of her postings. I particularly liked her
"travel journals."

This sent me looking at prior posts and seem to start around 1998. I
don't have the time, energy or interest to explore further, but I did

requesting the recipe. (search for "visiting the bf"). You do

Which one would that be?

I know many newer folks know of Barb's brownies, but some of us who
have been around longer remember Anne Bourget's brownies as the rfc
brownies.

ANNE BOURGET CHOCOLATE FUDGE BROWNIES

Brownies:

2 cubes unsalted butter (this 1/2 pound, or 2 sticks)
4 squares Bakers unsweetened chocolate
2 cups sugar
3 large eggs
pinch of salt
1 cup flour (unsifted all-purpose unbleached)
vanilla extract

Preheat oven to 350 degrees F. Prepare baking pan (lightly butter and
flour). I use an ancient 7x11" pan.

Melt chocolate and 1 cube of butter in saucepan. Be careful not to
burn
chocolate! And add pinch of salt.

In the bowl of an electric mixer cream the remaining cube of butter
with the
sugar, scraping down the sides as needed. Add eggs one at time and
beat
about 1 minute between adding next. Add vanilla extract - I like a lot
of
vanilla and usually just kind of pour it in (2 - 3 teaspoons?)

Now most recipes will tell you to let the melted chocolate cool before
adding to the batter. I don't - I prefer to add it while it is warm
and
yes, even hot. I just dump the chocolate-butter mixture in and blend
well.
(Note: don't wash saucepan, because you will use it for the frosting.)

Add the flour and mix JUST UNTIL BLENDED. Do not over beat!

Pour the batter into the prepared pan and bake 35 -45 minutes. The
difference in timing depends on your oven and particular taste. I bake
them
for only 35 minutes, because I like them fudgey rather than cake-like.

COOL ON WIRE RACK.

FUDGE FROSTING:

1 square Bakers unsweetened chocolate
1 cup sugar
1/2 cup heavy cream (all the better if it has soured)
pinch of salt
vanilla extract

In the same saucepan that you melted the chocolate and butter for the
brownies, add the chocolate, sugar, cream, and pinch of chocolate.
Cook
over medium heat to the soft ball stage. Try to resist stirring once
it
has melted in order to avoid sugaring of the frosting.

Remove from heat and transfer to clean mixing bowl of an electric
mixer
and beat until cool and thickened to fudge frosting consistency adding
vanilla extract TO TASTE (love vanilla - but do as you please in the
amount required.) Frost brownies and let frosting set before cut into
squares.

Now these brownies are very, very rich. I cut them in about 1 1/2"
squares, which I realize must seem small. But these are really killer
brownies. They are wonderful served with a scoop of good vanilla ice
cream.

Also, a word about nuts. I despise them (especially walnuts) and can't
even stand to touch them, however, I realize that many of you will
want to
add nuts. I say go for it. Just be sure that they are chopped fine
enough
to allow you to cut them into bars without having them falling apart.

Linda is very busy these days so rather than wait for her to have the
time to post her recipes, I asked Katie Green to help me. *Why Katie?
Because I knew she had Linda's gingerbread book. *So, I asked Katie if
she could look up the recipes for me. *Now, I know Katie is incredibly
busy these days, so I really appreciate Katie taking the time to email
the recipe to me.
Kay

One found only in Jewish bakeries, these are now sold throughout
America. *The cream cheese pastry is very rich, but not greasy; it
also makes a good pie crust. *Don't overwork the dough, however, or
it will become very tough. *You can use any kind of dried fruit--
apricots, prunes, and pears are especially good--instead of raisins,
but the caramelized sugar in slightly burnt raisins is wonderful.

* 1 cup plus 6 TBS unsalted butter * *1/4 tsp ground cloves
* 1/2 lb cream cheese * * * * * * * * 1/4 tsp Salt
* 2 large eggs * * * * * * * * * * * *3 cups unbleached or white
* 1/4 cup molasses * * * * * * * * * * *presifted all purpose flour
* 1 1/4 tsp ground ginger * * * * * * 1 1/3 cup raisins
* 1 1/4 tsp ground cinnamon * * * * * 1 1/3 cups finely chopped walnuts
* 1/4 tsp ground nutmeg * * * * * * * 1 1/3 cups brown sugar

* Beat or process 1 cup butter and the cream cheese together until
* smooth. *Lightly whisk together the eggs, molasses, ginger,
* cinnamon, nutmeg, cloves, and salt; then beat well into the cream
* cheese mixture. *Beat in the flour just until completely mixed.
* Form the dough into 8 balls, wrap in plastic and refrigerate for
* 30 minutes to 2 days.

* When ready to make the cookies, mix together the raisins, nuts and
* brown sugar in a bowl. *Remove one ball of dough from the refriger-
* ator. *On a lightly floured board, pat the dough out into a small
* circle; then quickly roll it into a 6" circle. *Cut it into 6 wedges
* but don't remove them.

* Melt the 6 tablespoons butter. *Brush the dough circle with the
* butter; then scatter 2 small handfuls of the nut mixture on it. *
* Lightly press the nuts and raisins into the dough without breaking
* through. *Starting with the outside edges of the circle, roll the
* wedges up, croissant style, to enclose the nuts and raisins. *If any
* of the nuts and raisins fall out, push them back into place. *Move
* the rolled cookies to a greased baking sheet, point side down. *Curve
* the cookies slightly to make crescents.

* Make the rest of the cookies the same way. *When you've made half the
* cookies, begin preheating the oven to 350F. *When all the cookies are
* on the baking sheets, brush them with any remaining melted butter.
* Bake for 25 minutes, until browned all over. *Cool on wire racks.
* Makes 48 Rugelach

My recipe? Cool beans. I'm flattered, fred. Truly. I don't make
them as much as I used to -- I'm not sure why, except that I haven't had
to bribe anyone recently. '-) Lately I've been giving jars of jam
instead of brownies.
Tripleberry Jam yesterday;
Plum Jelly the day before;
Blackberry Chambord Jam last week.
P'raps some of zxcvbob's Apricot-Pineapple Jam up next.

Thanks, Barb. This looks like the same recipe I found. The molasses
in thge recipe kind of threw me for a loop, so I wanted to see if
there was another one.. I'll give this one a try...

OK. I missed that you saw the recipe. Kay has sent me rugelach but I
don't recall that they were made with a gingerbread dough. Been a
while, but I'm pretty sure I'd remember the unusualness of it if they
were.

I never figured out who it was, she was a hoot. Some of the buffy
wanna bees were not as good. Wish she would take the very broad hint
and post some more travel adventures.
