i have a daughter thats went veggie and was wondering if there is any
good veggie recipes for her to try or any soups that are tasty and

There are all sorts of vegetarian cookbooks and online recipes/forums for
vegetarians. One of my favorite and quick to fix vegetarian recipes is
bean/corn chili.

Simply heat together three cans of beans (different kinds, drained or not,
depending on how thick you want it), a can of corn and a large jar of salsa.
I usually doctor this up a bit with a spoonful or two of cocoa powder, some
fresh cilantro, chopped onion and maybe some extra tomatoes if I have any
around. Serve as is or over rice if you wish. Top with shredded cheese,
sour cream, avocado or guacamole, black olives, chopped tomato, chopped
onion, cilantro and some corn chips.

Another quick to fix meal is pasta of your choice, cooked al dente and
heated in a pan with some kidney beans, chopped tomatoes and finished with
freshly ground black pepper and grated parmesan. Yum!

Tonight I am having vegan nachos. I started with some chips I got at the
health food store. They have salba (chia) seeds in them for added fiber and
protein. Make a nice bed of the chips, then top them with little blobs of
"refried" beans. I am using some canned ones but you can easily make them
yourself by cooking some pinto beans with a bit of onion and cumin, then
mashing with a potato masher to the desired texture and adding a bit of
olive oil. Top the beans with some vegan rice cheese torn into bits. You
can use real cheese if you're not allergic or not a vegan. Then put in
the microwave until the cheese melts. Garnish with black olives, Pico De
Gallo and sliced green onion or whatever else you like on your nachos.

Being a vegetarian is very easy. I was one for many years. I found I
could usually eat what the family was eating by leaving out a few things and
adding some nuts, peanut butter, cheese or eggs for protein. My family
almost always had a salad and two kinds of vegetables for dinner. I simply
didn't eat the meat and added the protein of my choice. I love beans too
and we always kept cans of beans onhand. Kidney beans on a salad are great!

Trail mix was another thing I was never without. I made my own with nuts
and seeds, dried fruit, coconut and sometimes even some chocolate chips. I
kept a bag of it in my purse so I would always have a quick meal if I was
out somewhere and couldn't find something suitable to eat.

Some people think all a vegetarian has to do is not eat meat. Not true
because we all need good nutrition. I know people who call themselves
vegetarians but they live on French fries, chips and candy. With a little
planning, it doesn't have to be that way.

I make grammar mistakes too. The tip was the person obviously didn't
lurk or google to learn this gets brought up a lot, and usually turns

I can deal with the words, but I can't pacify the whims of a child
that defy the food chain and evolution. If an adult (for whatever
reason) decides to follow that lifestyle I'd be happy to help. But
not a kid that isn't even capable of paying for their own food, and
statistically will be eating meat very soon. We dealt with it with
one of ours.

When ours was going through this crap I loved to make bacon. The
smell would drive her nuts. Of course she'd grab some when she

My niece is trying a vegetarian diet, and she loves my lentil soup. It
supplies
complete proteins when served with a sprinkle of cheese and some rice. (She
eats eggs and dairy).

1 bag brown or "rainbow" lentils. (They do not require soaking.)
about ten cups water
1 cup favorite salsa or canned, diced tomatoes, with or
without heat (spicy heat, in other words)
1 large onion chunked and browned until nice and dark ,
but still plump and firm.
Salt and fresh ground pepper to taste.
1 cup shredded cheddar to use as a condiment,
bowl per bowl.

Put the lentils in a large pot and fill the pot with cold
water. Put your hands in there and sort through them to
remove any debris or funky looking lentils.

Pour off this wash water and fill pot with about ten cups of
fresh water--enough to have about three inches covering the lentils.
Bring to a boil, then reduce to a gentle simmer for 20 minutes.

While they simmer, brown your onions.

After the lentils have plumped up, stir in the salsa, add the onions,
and salt and pepper to taste, simmer five additional minutes.

Serve with a little bow,l of shredded cheddar or other cheese,
so people can put on as much as they like. It's very good with
buttered rice on the side, too.

I went vegetarian and stayed vegetarian for most of my adult life. I still
eat mainly vegetarian meals now but I do eat meat on occasion. I just have
too many health problems and my diet is so limited. Sometimes it's just
easier to eat meat. But I would prefer a vegetarian diet. I feel better
when I don't eat meat.
