whats the best pastry for making samosas the triangle ones i have
tried and they come out like vegetable sauseage rolls

I don't know about the "best", but a friend of mine who knows Indian
food very well tells me that he's gotten very good results with flour
tortillas. If you've ever had a "chimichanga", it makes perfect sense.

If you have any access to a grocery selling foodstuffs from the
subcontinent, there are sheets of pastry made specifically for samosas.

Chinese spring roll skins work well too.
