Default Chicken leg experiment

I preheated the oven to 400 F, put just a thin coating of olive oil in a
ceramic baking dish, them mixed up:

3/4 cup flour
1 tablespoon rosemary
1 tablespoon thyme
2 tablespoons paprika
1 teaspoon cayenne
a goodly amount of salt.

Washed six chicken legs and coated them well, even pulling back the skin and
packing the flour mix underneath. In the end they were thickly coated and
dry on the outside.

I placed these legs in the hot baking dish for 15 minutes on 400F then
flipped them with a stainless spatula. they were crispy on the downside, and
smelled wonderful.

I reduced the temp to 375 and baked them for another 25 minutes.

They turned out really nice, the coating crispy in places and chewy in
others, KFC style but not as salty. The cayenne was a really nice addition.

We ate them with fresh cole slaw and skillet-fried potatoes with onions.

Never assume how other people live. This reminds me
of an Ann Landers column from many years ago in which
an anxious reader related her story about getting
together with some other housewives, and they were
talking about cleaning the bathroom and what a chore
it was to clean the toilet, when she discoverd that
one of the more challenging parts of that job (to
some of her friends) was cleaning the inside of the
toilet tank. She'd never heard of anybody doing that,
and she was writing to Ann to find out whether it was
normal to clean the inside of the tank. As I recall,
Ann had never heard of that either.

I've cleaned the inside of my tank at some of the places I've lived.
Sometimes it gets really mucky in there. Sometimes not. Not sure what
causes it.

It is probably mostly particles of dirt from your water supply. Municipal water
is pretty clean, but there is still some stuff that gets through. I get water
from my well and the soil here is sandy loam, so there is a brownish sediment
that builds up rather quickly. Ever month or so I stir it up and give a few
flushes to purge it from the tank.

There is a scum that builds up in there, especially if that
toilet doesn't get used often. Bacteria in the air get in there
and breed, and can get slimey. Many toilet tanks have green
stains inside the porcelain tanks from mildew and such.

I still don't see that this has to do with chicken legs ;-)

It added to the nice, crispy, chewy breading. I think the key is to use more
flour mix than I have in the past, and to make sure the pieces are dry on
the outside before you put them in the oil. They were more "oven-fried"
than baked. Had I baked them at a lower initial temp, it would have been
like glue.

Welcome. I just tried one out cold, and it was good that way
too. I think getting as much of the flour mixture on as possible
made all the difference in the flavor and texture. Heating the
oil first in the baking pan aided the browning and crisping, too.
The reason I put so little oil in is because I knew once I got
it started, the chicken was going to produce enough fat of its
own to finish up the crisping.
