Every once in a while I get this stuff right.
http://www.jamlady.eboard.com is where the pictures are. The accompanying text the "When our friends hurt we feed them. If it doesn't do much for them it makes us feel like we've "done something" in a situation where there's nothing we can do. So here I am, making meatloaf meals for her folks. My foodie friends have heard me kvetch often enough about how much I hate meatloaf, but Rob loves it, and Amy's dad has always eaten anything I've ever put in front of him (OK, so it was some fudge * that still counts). In Amy's last post to her CaringBridge site, she asked people to write today about miracles they've been a part of or in the presence of, no matter how small. This is to encourage Warren, her loving and beloved husband. Warren!! Listen up!! This meatloaf is edible!! That's a miracle!! "-) Not only edible but damn fine! Here's what's in it: 3 eggs 2 cups freshly dried bread crumbs (figure that out) 1 cup milk A carrot, an onion, half a green pepper, a handful of fresh parsley, some dried celery * all chopped in a food processor 4# ground chuck 1# ground pork 1 link Johnsonville mild Italian sausage, casing removed Five twists of the pepper mill Some kosher salt Ketchup, mustard, brown sugar, barbecue sauce Below, you can see what I did in the order I did it. After I mixed it up I made three Bigass loaves and set them to bake on my broiler pan rack which I'd lined with foil and slashed for drainage. I put water in the pan to reduce smoking fat. It almost worked. I was going to do 340 degrees for about 2 hours. They didn't need that much time. The meatloaves are really fine but the real fun was when I rotated the pan (no I do not know why I thought I needed to do that), and greasy water splashed and tall flames appeared in my oven. Waal haal, where there's flames, ThereBeSmoke. I deftly opened the window, the front door, and turned on the vent fan and the smoke alarm never went off. I'm not sure that's necessarily a good thing. I warned Rob to expect it to go because there were some more flames a couple times (little ones * shut up) and a grand outpouring of smoke when I opened the oven door (I wanted to get the stuff out of there). Like I said, these are edible. I'll even eat some of it. Actually, they're very good. Mmmm-meatloaf. Gary might get a Big Mac. (Oh, stop it! I'm kidding.)" How hot the oven...325 degrees okay?

Normally would have done 350 deg but wanted something a little slower but hotter than 325.. :-) When I stuck the thermometer in them, they were well over 160 deg. - more like 180.
