I have started making hard candy with molds. For some reason my
candies come out flavorless. This last batch I added twice the flavor the recipe called for and it just tastes like sugar. I am guessing that I am adding the flavor at the wrong time and it is evaporating away. I am waiting until teh boiklign stops and then add teh flavor. is that correct or should I wait longer? I am uising LorAnn flavors. I want to make sugar free candies, but I want to fix this problem before I do since the SF stuff is so expensive. Thanks for any help. |

I was going to say maybe you were using the wrong flavors, but... I find the LorAnn stuff is very strong! I haven't tried it in SF hard candies but I did try it in jellies and even a small amount on a toothpick was too much flavor. They were inedible. You are correct to add it after it has stopped boiling. Don't know what else to tell you. |

I suspect that the problem lies in the "sugar free" aspect. It is likely whatever he is using for the base of the recipe that is causing it to have no flavor. Just as my sugar free jelly candy had sooo much flavor it was inedible. I've yet to find a sugar free candy that actually tastes good. |

I gave all the information needed for someone who knows how to make hard candy to answer the question. if you don't know the answer it's okay, but why flame me because I don't follow a particular format you want me to follow? A few people have already given me tips and didn't need any more information than what I gave. |

If the recipe did not work then it would be impossible for anyone to make hard candies since - as you would know if you knew how to make hard candies - we all use the same recipe. If I used the recipe incorrectly then posting it here would not help anyone answer my question as I would have no idea what I did wrong. I posted the question for people who might have had the same experience and would know what to do.
