Default Recipe help - Canned Organic Soy Beans

The other day I visited the 99 cents or less store. I picked up a can of
"Libby's" Organic Soy Beans. (15 ounces) It intrigued me because each
serving of 1/2 cup contained 13 grams of carbohydrates and 12 grams of
dietary fiber making it only 1 countable gram of carbohydrates for my
diabetic husband.

I thought I'd be able to find some recipes on the 'net, but I haven't
been able to. Most of what I found was for black soy beans or fresh
edamame or tofu. These are green soy beans cooked in water with some sea
salt added.

The recipe on the label of the can is for a salad containing rice. Rice
(even brown) is a no no here.

Does anyone have a recipe to share using canned organic green soy beans?

TIA

Texas Janet

Janet, if you google for "soybean salad" there are tons of recipes to be
found. I doubt it matters much in the salad whether they're organic or
not. Not know your or your husband's taste, I didn't snare any specific
recipes to quote.

Take the beans rinse them well and drain them dry really well. Toss with
a little oil and a nice spice blend say a cury powder or taco like spice
mix and roast them till nicely browned and crispy in the oven in 1 layer
spread out on a cookie sheet, shaking the pan every now and then so they
brown evenly...Viola Soy nuts! a tv watching snack.

Oven temp? you say.... probably 375 to 400F.
