I bought a bottle of 'Spice Islands' powdered Jerk seasoning in the
grocery store and I adore the flavour - I put it onto a turkey breast I was roasting the other night and it was WONDERFUL! But it's not hot at all! Is this some kind of bowdlerised version? |

It may contain red pepper (don't know about the Spice Islands blend) but the heat isn't intended to overwhelm, which is a good thing in my book ![]() Jill |

I usually use the paste, but the powdered is very decent too. -sw |

The jerk dishes I've had in restaurants where they know what they're doing have been pretty hot, but Penzey's jerk seasoning mix is mild. I add some extra cayenne. -aem |

Jamaican jerk seasoning is supposed to be spicy but it is not supposed to be fiery hot... those who want it fiery really don't care for cloves and allspice... just like those who really don't care for the flavor of cumin, oregano, and garlic of good chili so they rather be numbed by the hottest peppers... chili heads are the ultimate taste in assers, literally! I was referring to the generic name brands like McCormick/Shilling, Spice Islands, Tones, etc - companies that distribute a full line of ridiculously-priced spices in matching jars for people with more money than sense. -sw |

LOL True chile-heads have built up an immunity to heat so we can taste the flavor of the chile being used, as well as the food and other spices. Habanero/Scotch Bonnet, for example, is pretty much the best, most complex tasting chile out there. But to appreciate it you have to eat it often. It's wimps like you that will never taste real chiles and need that sissy stuff for your virginal tongues. -sw |

They have two varieties it seems, the mild kind and the incredibly hot kind made with scotch bonnets. It will knock your socks off. If you want the former, you usually have to make it yourself unless you are lucky enough to have a specialty grocer. Paul |

I'd never buy the basic spices in those fancy brands - I use Badia for the basics because it's the cheapest there is! But their range is very limited, so I've had to get the more exotic things in more expensive brands. I gravitated to the jerk seasoning because it was a novelty to me, and I was very pleased with the flavour... I just wondered if it was really supposed to be that mild? |

Damn this booze! Walkerswood is plenty hot and has a good overall flavor. It comes in jars that look not unlike peanut butter. -sw |

Jerk as a whole is about as variable as American BBQ is, and everyone has their own recipe. I do love the jerk seasoning exactly because it has such a complex flavor profile that is so different from most other hot stuff. |

I'm referring o the default paste (notice that it's "Item #1" in their database): http://www.walkerswood.com/product_detail.asp?pID=1 ....which I'm used to buying in bigger jars (10-12oz?) than that and which they're claiming are out of stock now. The manufacturer is out of stock? That's a not a good sign. I hope they don't discontinue it. -sw |

The 10oz jars are what I normally get, and being their first and signature product I doubt they're discontinuing it. Their web store seems to have some issues frequently. I'd love to get the big commercial size packs they sometimes list on their site, some metric size around 7# I think. |
