Default My Easter Menu

My Mom usually hosts the holiday dinners in our family as she has more
room than my sister or I do. A few months ago, she slipped in her
backyard and broke her ankle. Understandably, she doesn't feel up to
hosting Easter, so I volunteered to do it. Thought I would share my
menu with you as some of you will be held responsible! LOL! Appetizers
will only be cheese, salami, and crackers as we always have a tendency
to fill up on apps! The rest as follows:

Ham
Pommes Americanes- recipe to follow
Steamed asparagus with s & p & butter
Best Baked Beans- Thanks to Terry "Squeaks"
Strawberry Spinach Salad- Thanks to Kili
Deviled eggs
Relish tray
Carrot Cake- Thanks to Wayne
Lemon Bars- Thanks to "Bakesale Betty"

I think it's sounding pretty damn good! Now, for my contribution.
Pommes Americanes, or as they are known in my family as "White Trash
Potatoes", are the only reason I have ever bought Velveeta! This
recipe was given to me by my sister a few years ago, but no idea where
she got it, so I cannot credit the right person for this.

Pommes Americanes
2 24 oz pkgs frozen shredded hash browns
2 cups half & half
3/4 lb Velveeta
8 oz butter
1 tsp salt
1/4 lb or more shredded cheddar cheese
Thaw potatoes- crumble into a 9 x 12 baking dish. Put 1/2 & 1/2 ,
Velveeta, and butter into a medium sized saucepan over low heat,
stirring until melted. Pour sauce over potatoes, & mix with fork. Top
with cheddar. Bake at 350 for 75 minutes, watching carefully the last
15 minutes.

Dunno, but I think the Velveeta is required to get the right
consistency for the sauce. BTW, this is great for a hangover! On Xmas
morning, I make this and a Strata & pop them in the oven for the
easiest breakfast ever!

Strata is dead easy, but I can't imagine the two together - too many
carbs.

That's pretty much how I feel about any holiday meal that includes baked
beans (picnic food, IMO) as well as potatoes. They don't "go" together
except at a picnic. I'd just want more vegetables myself. Especially
since dessert is also so carb heavy?

I do a strata on Xmas morning myself. No meat in it, but baked bacon on
the side and fruit. No other casserole necessary or desired here.

I've had this at pot-lucks but instead of Velveeta they use
cream cheese.
Yes, it is tasty. Even better made with frozen Potatoes
O'Brien. The onions and peppers add a nice touch.

Speaking of strata, I had a interesting one yesterday. It
contained artichokes and goat cheese. I thought it could use
some sparking from lemon zest. I think I'll have to play with
this concept a bit.

I saw a recipe for one that had crab & swiss cheese. You can get
really creative with a basic recipe. BTW, everything I made for Easter
dinner turned out incredible. Terry's bean recipe was great! Whenever
I had made beans before, I would get 5-6 cans of assorted beans and
doctor them up with bacon, brown sugar, etc. Not anymore! These were
time consuming, but easy and worth the effort! The spinach/strawberry
salad was a surprise hit- my husband almost talked me out of making
it, but I'm really glad I didn't listen to him! That's going to be a
summer fave, especially when the local berries come in. I made Wayne's
carrot cake, but made cupcakes out of the batter, and topped with
cream cheese icing- incredible. Bakesale Betty's lemon bars were the
only thing I had a problem with. I made them the day before, and put
them in the fridge. The tops ended up kinda damp, so when I sprinkled
the powdered sugar on, it melted, which was not very attractive. But
they were sure good & lemony- I got the lemons from a little tree my
mom has in her greenhouse. Thank you everyone for posting these
recipes!!

Sounds delightful! I can't wait for the native strawberries
to be available!

The spinach-strawberry salad I am envisioning contains the
obvious plus sliced almonds and is anointed with poppyseed
dressing.

Yup- that's the one I made. I used sliced, toasted almonds, a little
balsamico, & no sesame seeds. Delicious!!

That lookas just like it--and very like my recollection of my
poppyseed dressing recipe, although, IIRC, it was done in a
blender.
