Default REC: Tasty Vegetarian Pizza

We spent the week before last skiing with out of town
relatives including a vegetarian. One meal was good enough
to recommend:

Spinach Pizza, Chicago style

1 can refrigerated pizza dough (or homemade)
1 pkg. frozen chopped spinach, thawed and well drained
8-16 oz. part-skim mozzarella cheese, shredded (depending on
how much
cheese you like)
1/4 cup shredded Parmesan (or more) divided
2 garlic cloves, minced finely
1 can (28oz.) tomatoes, drained and chopped
2 tsp. dried oregano or Italian spice blend
1/2 tsp. dried red pepper flakes (optional)

Heat oven to 500 degrees.
Press pizza crust onto bottom, and sides of a well greased
deep dish
10 inch pizza pan or a 9x13 inch baking dish.
Mix well-drained spinach, mozzarella, and 2 Tbsp.Parmesan.
Spread evenly over crust.
Mix tomatoes, oregano,. garlic and pepper flakes.
Spread over cheese mixture; sprinkle with remaining Parmesan.
Bake 10 minutes. Reduce heat to 375 degrees and bake for an
additional 20 minutes.

Serves six.

happy to.

Check with the Fish and Game people. I think they're out of season
except in September.
