Default Dinner, not so snazzy

Tonight is simple. I made spagetti with a jarred sauce and added meatballs.
I was gonna steam up some cabbage relative to brussell sprouts but Charlotte
was hungry right away so we ate.

Meantime I have rye bread in the breadmaker, and a hoisin red pork in the
crockpot going for tomorrow.

So, any others make simple tonight?

Pan fried perch and baked (from frozen) skinny fries; steamed green beans.
Maybe some ice cream later.

How about a toss of capellini, basil, garlic, olive oil, walnuts,
tomatoes, parm cheese, red pepper flakes, parsley.

Or quick tacos of tortillas, drained kidney beans, cheddar cheese,
white diced onion, tomato, cilantro, sour cream, avocado, tabasco?

Or chilaquiles of fried corn tortillas pieces, diced white onion,
cilantro, cheddar cheese, soft scrambled egg, etc.?

Or roasted eggplant slices with garlic and olive oil tossed with
spaghetti and parm cheese?

That it will be! Mostly dinner though with steamed bok choy and a creamed
taro soup of my own make-up.

Most of my fancy stuff takes a bit of time to be ready.

Kay's Margaritas

beverage alcohol

1 2/3 cup sauza comemorativo tequila
1/4 cup grand marnier
1/2 cup lime juice
1 teaspoon finely grated lime zest
1/4 cup sugar
lime wedges
coarse salt

Mix the tequila, Grand Marnier, lime juice, lime zest, and sugar in a
glass or plastic pitcher until the sugar dissolves. Cover and
refrigerate at least 2 hours (but no more than 24 hours). Strain into
another pitcher.

Rub the rims of 8 6- to 8-ounce glasses with a lime wedge, then dip
the rims in a dish of coarse salt. Serve the margaritas on the rocks
in the prepared glasses.

I did simple. Medium rare filets on the grill with a bit of Maytag
bleu on top and a massive Caesar salad. Decent Pinot Grigio.

Ours was also pretty simple: spaghetti with a white clam sauce (olive oil,
butter, lots of garlic, parsley, oregano, clam juice/broth, a bit of lemon
juice, s/p, and baby clams), garlic bread, and a tossed salad. Assorted
Jelly Belly's (from Easter) for dessert.

Very simple: take-away kebabs (or kabobs, as you prefer) from a pakistani
shop
Mine was laden with hot sauce, I love that kind of hotness used in India and
surrounding countries.

Left work at 11:30PM tonight because the vultures are doing a walk
through tomorrow and I was fretting. Dinner was half a burrito,
rewarmed. Is that simple enough? I still am not relaxed, and
wondering if I'll be able to sleep tonight. Headache is pending....

Here too unless someone is invited. I do cook things constantly to develop
new recipes and to publish, but in reality I make the smallest amount
possible and I eat just that one thing because it is there and I have to.

If I see three or more things on my plate I think it's my birthday.

In my quest to get rid of The Eternal Ham, I gave about a pound to a
young friend yesterday and we had pancakes for dinner tonight
accompanied by a Denver omelet mixtu ham, green pepper, onion. And
beautiful strawberries that were far more beautiful than they were
flavorful.
