I figured it would be a big project so I waited for a weekend to make
the Texas Doodle Pie posted here by Rosie. So if you want to skip all the blah, blah the recipe is posted at the end. I took it to work today to share with my co-workers. They were stopping by my office to tell me how good it was. One lady said by 8:30 am there were only 3 slices left. I cut it into very, very thin slices because it is so rich. It's a three layer cake, or actually pie, umm....cake. There's a graham cracker crust, standard procedure. A dense chocolate cake layer that's topped with chopped snickers and cream cheese. It's then baked and topped with a chocolate ganache. Export Format Texas Doodle Pie desserts ----Crust---- 6 tablespoons melted butter 1 1/2 cup graham cracker crumbs 1 tablespoon sugar ----Fudge Layer---- 1/2 cup flour 3/4 tsp. baking powder 1/4 tsp. salt 6 oz. semi-sweet chocolate, chopped 10 tablespoons butter 1/2 cup plus 2 tablespoons sugar 2 eggs 1 egg yolk 1 1/4 tsp. vanilla 2 1/2 cups snickers candy, chopped ----Cream Cheese Layer---- 12 oz. cream cheese 1/2 cup sugar 1 egg 1 1/4 tsp. vanilla ----Ganache---- 1/2 cup heavy cream 8 oz. milk chocolate, chopped Preheat oven to 350 degrees. Make crust by melting butter and adding to crumbs and sugar. Mold into 10-inch round, parchment-lined cake pan that has been sprayed with Pam. For the fudge layer, sift the dry ingredients and set aside. Melt the chocolate with the butter and set aside. Beat sugar, eggs, and vanilla. Mix in the chocolate mixture and then the add flour mixture. Pour the fudge mixture onto the crust and bake until almost set up (about 15 minutes). Remove from oven and add the chopped Snickers pieces to top. To make the cream cheese layer, mix the cream cheese and sugar, and then add the egg and vanilla. Top pie with cream cheese mixture. Bake until cream cheese is set (20-25 minutes, actually depends on your oven). Remove from oven. Let cool. Make ganache by bringing the heavy cream to a boil. Add the chocolate and let it slightly thicken, stirring. Top cream cheese layer with ganache. Cool. My. Gawd... what a super decadent dessert!! Thanks for posting the great pics and recipe, koko. I could go for a slice of that right now. I lived in TX for 16 years and never heard of Texas Doodle Pie til now, but it sounds like something that would be good to make for a potluck or special meal. Mary |

Yes, a springform pan would have been a world better than what I used. I have one, just didn't think of it. <hitting self on forehead> Anyway, the recipe called for a 10" cake pan and for the pan to be lined with the parchment. I did hesitate at first but decided to follow the instructions, especially after reading the fudge layer, fudge = gooey, sticky to me. There was also the candy bar layer which is gooey, sticky also. The graham crust was on the bottom only, not up the sides. Since I wasn't bright enough to think of the springform pan the parchment made it easier to remove the cake,pie,cake from the pan, and with all the gooey-ness I only had a few spots on the top rim of the pan to scrub clean. Next time I'll wait until the cake,pie,cake is removed from the pan to put the ganache on it. It would have looked much better to have the ganache running down the sides of the cake,pie,cake.
