Default Indian sauce ?!?

Hello.

I am interestend in indian cooking.

How is it called the typical "sauce" done in Indian cusine with oil,
spices, ginger and so on ?
They told me something like "tchansin"... but I'm not so sure.

Could you help ?

Thanks, Matteo.
