If I make it myself at home, I love using Italian sausage. Italian sausage
on commercial pizza has been vile to my taste for the past 40 years.

Otherwise, I like Italian sausce, green pepper, onion, garlic, pepperoni
(if I cook it crisp), and sometimes anchovies.

Having said that, I'll eat almost anything offered on a pizza.

gout.

I use the 21 count or bigger. Fresh is best, frozen works so long as you
completely defrost them and then let them sit on paper towels to draw out
the excess water. Excess water will ruin the pizza. I go a layer of
mozzarella and some provolone then sauce then shrimp, garlic on top of that
then grated parmesan and Romano then the parsley. A little dried basil
works nicely too.

It rocks. The secret is a screaming hot oven and a hot stone. Must be
cooked fast. Lay the cheese down, but don't grate it, use the food
processor to turn it into a gravel like consistency. Then make little
pockets, drop in a raw egg and sprinkle with chopped bacon and parmesan and
a touch of salt. It works best if the crust is not so thin and not cooked
crisp, keep it a bit soft..

I'll have to agree with you there! I can handle the sausage, but pepperoni
does me in. If I can only have one topping, I'd forgo the bacon in
preference for the sweet onion rings. They get even sweeter when baked
atop a thin St Louis style crust. I could eat an XL Stefanina's pizza right
now just thinking about it. Damn you! Gas is too expensive. pfft.

I've concluded there are just too damn many pizzas in the world that I
can't get to try, but there's probably some great pizzas in some form on
all continents.

I surely wouldn't mind sitting down with Chatty Cathy & 2D Jack in South
Africa for whatever version pizzas. I'd pay for the privilege and the
pizzas and the ammo!

No sauce. You want a coarse grate for the cheese, I use the food processor.
You need something to hold the eggs together while they cook so the cheese
should be like gravel sized bits. Then you spread that out on the dough,
make your pockets to hold the raw egg, top with the crumbled bacon, a
liberal sprinkle of parmesan and romano, some salt and into the hot oven.
The eggs come out fairly medium so you have a crispy yet somewhat soft
crust, the gooey cheese, the creamy eggs and the bacon. I use about 4 eggs
for a pound of dough. They tend to spread out a bit so you get good
coverage.

You'll love it. In my case I had to make a few before I got the
temperature/time thing down to my liking. You may like really soft eggs, me
I like medium well. But it's all good.

Post your results. I'm thinking when my gut is happy again I'll whip up a
shrimp pizza complete with photo essay. Maybe I'll go crazy and use a
little pesto on it.
