Default Ginger root

Are you experiencing a shortage of ginger root in your area? Two weeks ago
I couldn't find any in the stores, this week all I could find was tiny bits
and pieces. Did something happen to damage the crop?

Apparently not the supply to AZ. I bought a hand last week and there was
plenty available. Maybe just in the UK?

No shortage here in New Mexico either: I picked up some this last week
myself. From a huge pile of it at one of the local Asian
markets...and it looked good. Big pieces, good price.

Nope, I was just at the store today and noted a good stock of large
ginger roots, right next to a similarly large stock of horseradish
roots.

I've run into the same situation. The last time it was at Whole Foods
and they had just then stopped carrying ginger from China and were
awaiting a supply from California. I hadn't been able to find ginger
at other stores, either, that's why I was there. The exception was
that they had gorgeous ginger at the oriental market, but it was packaged
in a two year supply. I would have bought it if I knew what trouble I was
going to have getting it.

The previous time, I asked the guy for ginger, I couldn't find it. He
showed me what they had and was apologetic ... it was small pieces,
all old and shriveled. Not worth buying.

I think ginger is one of those items neglected by the stores.

Sorry, Janet. I guess I only looked as far as "Janet B". :-) Yes, ginger
is plentiful here, at least in the several stores where I shop. I can't
explain its absence elsewhere.

That's a good way to keep it, which I often do as well. I also will
sometimes peel it and drop it in a covered jar of sherry or madeira and
keep it in the fridge. I like that because the wine becomes infused with
the flavor and is very useful in dishes on its own.

I learned the ginger in the sherry trick from a course in Chinese
cooking my GF took in the 70's. We kept it in little baby food jars
which was okay because we had little babies.

At least an 10" pot, regular to slightly sandy soil. Pick a piece of
ginger that seems to have eyes on it. Place at least a 3-4" chunk of
it in the pot and keep it in the shade. Bright, but indirect light is
fine, though. It'll burn in the sun.

Long, thin green leaves will sprout up like a green leaf fountain and
grow from spring to late fall, then die back over the winter. It'll
still be alive and grow again the next year.

Any time you want ginger, just reach down, find a piece of new growth
and cut it off, returning the rest to the pot.

Right now I have ginger, galangal and turmeric growing like that. Of
course, I am insane...I am probably the only person in northern New
Jersey with an Arbequina olive tree about to bloom, too. I swear I
will get that sucker to fruit.

And I am growing a giant sequoia in a pot, too.

One thing I like to use both the madeira and the grated ginger for is
homemade gingerbread.

A two-year supply would be just about right for making candied ginger.
I need more because we just finished my Trader Joe's stash, and will
make the crock-pot recipe that turned out so well last time.

There you go, I love candied ginger. Thing is, what's up with ginger
from China, which is where I assume this stuff originated? I heard
something in passing, then Whole Foods got rid of their supply.

Maybe I don't want to know.

Thank you. Another 10-inch dormant pot in the house in the winter would be
a bit much I think. . .I currently have 4 of them in the house overwintering
my tuberroses. If I can find some good hands, I think I will freeze them.

Yes, ginger in any form (even dry ground) has a degree of hotness. There
is a brand of gingerale available in the midwest and I believe in the east
that has enough ginger in it to have a slightly hot aftertaste. Have you
ever seen or tried Vernor's Gingerale? It's the only gingerale that really
tastets like ginger to me. The typical amounts used in recipes don't
usually get much heat from ginger, mostly just the flavor. Having said
that, I would not suggest drinking the ginger infused sherry or madeira.
Use the wine in cooking or baking.
