Well I tried a little 'speriment last night, thinking of you my dear! I
brined some chops - these were yer typical Costco rib chops, about 1/2"
thick. I then schmeared them with an "adobo" paste recipe from Bruce
Aidell's pork cookbook: mixture of garlic, oregano, salt, pepper, paprika,
red wine vinegar and olive oil. They "marinated" for about 1 hour. I
removed most of the paste as per recipe. I pan fried these for about 4
mins per side. I think I'll go a bit less next time, maybe 3 mins. But
MAN, they were tasty! We loved 'em. ORiginal recipe called for grilling
them, with pan frying as a secondary option.

Here's the original paste recipe for 8 chops:

1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 cup Spanish or sweet Hungarian paprika
1 teaspoon dried oregano
1/4 cup red wine vinegar
1 tablespoon olive oil

Hope you find this useful, Wayne, and thanks for the inspiration!

Thank you, Tammy! The paste sounds delicious, with flavors I generally
use. I will definitely give this a try. I may try both cooking methods to
see if the paste marinade makes a difference, or it's just the cooking
methond.

Cheers!

The Bible tells us to love our
neighbors, and also to love our
enemies; probably because generally
they are the same people.
