Take a few slices(serving)wrap in cellophane and freeze. Or as a previous poster has said, just buy enough for a couple of days etc. |

You can freeze some deli meats and keep them for a long time though, but they need to be wrapped airtight to avoid freezer burn. Deli turkey and chicken freeze very well. |

All sliced deli meats are highly perishable, turkey/chicken are the most perishable of deli meats. Assuming the particular deli is clean and adheres to a proper food handling regimen use within two-three days. These have a use-by date (which is merely a guide), mostly depends on storage temperature from time of production... many shippers and stores do not refrigerate promptly/properly. Once opened use within 2-3 days. With sliced deli meats take what you need and immediately place the remainder back in the fridge, never allow cold cuts to come to room temperature... once sliced all that surface area is already contaminated... once allowed to come to warm it will take hours to cool the interior portion in the fridge. If not eaten immediately place sandwiches back in the fridge, and then consumed within no more than six hours... and never apply mayo or lettuce to any sandwich until just before consuming. In warm weather especially it's unwise to take any luncheon meats to be eaten later unless cold pacs are used. When taken on a picnic do not bring any leftovers home, best left to feed the critters. Personally I don't recommend buying more sliced turkey or chicken than will be used that day... deli ham is also highly perishable, use within 24 hours, other cold cuts used within two days... hard salamis/ pepperoni have a longer fridge life but more than two days worth shouldn't be sliced until they're to be consumed. When purchasing a selection of deli meats consume the most perishable first. A good way to tell if a deli uses proper food handling practises is to be observant about how they handle deli meats, if they do not throw away the first slice do not shop there, if they cover the cut ends of deli meats with plastic wrap do not shop there, if deli meats are in trays set flat so that they sit in their own fluids (listeria) do not shop there. Watch carefully how other customers orders are filled... if you notice that they do not throw away that first slice quickly move on, there is no point in apprising the store management, they already know but choose to cut corners.... shop elsewhere. Typically in-store stupidmarket delis are the worst offenders, it's better to pay a few cents more and buy from a dedicated deli, but some of those are not very clean either, be wary of those delis with a high employee turnover and/or many part timers... use your eyes... remember, you cannot smell food poisoning. |

Of course they are going to reuse the same wrap many times, and handling plastic wrap is a great way to cross contaminate... like sharing used condoms... but it's best that the meat be exposed to the air, most of the toxin producing organisms do not reproduce as actively when exposed to oxygen. Each deli meat should be placed on a plastic tray that is set at in incline so that it's not sitting in its own juices... and only one piece of meat to a tray. Deli clerks are not supposed to be talking while handling food, especially not at the slicing machine... yoose may not mind but I don't like my bologna sandwich coated in strange spittle. |

After 2-3 days it gets slimy, gross looking and stinky. The smaller places always have lines at the counter and charge less than half of what the big places charge.
