I am currently searchin' the 'net for some homemade bbq sauce recipes,
and found some that use catsup. I don't wanna use anything like catsup because I want to do this all from scratch. (especially to cut out all that high fructose corn syrup crap for my 1 year old) In place of catsup, do I use tomato paste or dilute the tomato paste with something like water? In the meantime, if anyone has any delicious yet simple bbq sauce recipes I'd appreciate it. I'll follow up with any I find for thoughts. Thanks, Paul |

I'm figuring you need to start off with tomato paste, or stewed tomatoes, or something along those lines, right? Then from there you add things like molasses (or white/brown sugar), worcestershire sauce, onion, maybe peppers, maybe garlic. I know I don't want to make pasta sauce so I have to be careful there isn't too much tomato. I'm just looking for a place to start, rather than an exact recipe. That way I can experiment. I'm not sure it's practical to keep it quite that long. If your recipe includes catsup, it's not too difficult to find a HFCS-free catsup. Otherwise, a mixture of tomato paste, water, and either blueberry or apricot jam works. (Making sure the latter are also HFCS-free too.) You can try leaving out the tomato ingredient entirely but my experience is it wants some tomato in it, even if the effect you're going for is a non-tomato-y sauce. I always put brewed coffee, a little liquid smoke, vinegar, and cayenne in. Some may prefer to leave out any of these. Steve |

Optionally, Worcestrshire sauce, mustard, cumin, Tabasco, or any thing else that falls in. |

Are you 100% stuck on a tomato based sauce? I mean there are a gazillion sauce recipes out there that do not require tomato. (The Carolina style comes to mind right off the bat.) Your best bet might be a mopping sauce! At any rate, here's one from my book to start you off. Texas Hillbilly Mop Sauce INGREDIENTS: 2 cups vinegar 1 cup olive oil 2/3 cup Worcestershire sauce 1/2 cup water 2 lemons, pulped and cut in half 2 tablespoons hot sauce 6 bay leaves, crushed 2 cloves garlic, minced 1 tablespoon paprika 1 tablespoon chili powder PREPARATION: Place all ingredients in a large pot and bring to a boil. Export Format Alan's Apple Butter Bbq Sauce BBQ, favorites, keeper, sauces/dips, tested 1 14 oz can hunts Italian tomato sauce. 1 cup apple butter 2 tbsp molasses 1 tbsp maggi sauce 1 tbsps franks hot sauce 1 tsp mustard powder 1 tbsp+ onion powder 2 tsp lemon juice 1 package slenda liquid smoke; to taste 1/8 tsp mace In a small pot stir together ingredients. Bring to just boiling remove from heat. Adjust sweetness with apple cider Vinegar Notes: July 26 07 I used the juice and zest from 1 small lime instead of lemon juice. Mustard Based Central South Carolina BBQ Sauce Recipe #4580 by Tonkcats 1 batch 3 tablespoons peanut oil 2 cloves garlic, Minced 1 onion, Minced 1/2 cup catsup 1/3 cup apple cider vinegar 2 tablespoons lemon juice 2 tablespoons honey 1 tablespoon brown sugar 2 teaspoons dry mustard 1 teaspoon ginger 1 pinch salt Combine ingredients and set aside. Grill meat (do not add anything). During the last 4-10 minutes baste with this sauce. Boil the remaining sauce and spoon 2 tablespoons onto each plate, adding the meat portion. |
