Default I was out of oil

Didn't have any oil in the house (how does that happen?), and a stir-fry
was on the menu. I had a little bit of schmaltz and a little bit of
bacon fat in the fridge, so I used those instead of oil. Fried up the
onions, garlic, and ginger in schmaltz, then did the tofu and veggies in
bacon fat. Added soy sauce and a generous amount of Thai sweet chili
sauce and served over sticky rice.

SO good, but then how could it not be, with a quarter cup of rendered
fat in the mix?

And of those, I can't imagine anything better than that got, under
extrmeme duress, from domesticated bacons.

It sure isn't fair with bacon fat. The only bummer is the amount of
cholesterol and saturated fats in bacon fat. We routinely slather the cut
ends of standing rib roasts with bacon fat when we cook them.

It's not, however true for lamb fat; it tastes terrible.

until fairly recently, i'm pretty sure the chinese used lard as the
fat in stir-fries, so i don't think you can go too far wrong there.
