All this avocado talk has me craving a bowl of guacamole!
Do you prefer lemon or lime? garlic? or no? smooth? or chunky? Me, I keep it pretty simple. Avocado, very finely minced onion, fine diced tomato, garlic, lime juice, cilantro, minced serrano, salt & pepper. I prefer lime to lemon, always add some form of garlic, and like chunky better than smooth. kimberly |

I always start by making fresh salsa. If the meal calls for guacamole you've *got* to have salsa, too. Chopped tomatoes and onion, pressed fresh garlic, cilantro, lime juice, minced jalapeno peppers. If you like it saucy, or if it's winter and the tomatoes are feeble, use lots of the flavory stuff, just a few "fresh" tomatoes for texture and add a can of crushed tomatoes in tomato puree for good tomato flavor. Then I chunk up some ripe avocados, add a scoop (highly technical measurement) of salsa, a little scoop of sour cream, mash it around and taste. Add salt and/or lime juice as necessary. Cover with saran wrap and chill for maybe an hour or so to let the flavors blend. I've seen one guest rap another on the knuckles with the back of a spoon for trying to steal the last bite of this off of a plate. |

Defo lime and plenty of it. I love it with a touch of sour cream as
well. I prefer mine with fresh minced garlic and sans clilies (but if I had to put some in I would use a bit of jalepeno), fresh tomatoes as well (and I don't like cilantro). YUM! Chunkier the better. Stef |

Just a little kick. Sometimes I serve a little dish of extra serranos next to it for my husband and his brother. I like to put fresh ground white pepper in it too, gives it a little extra something without too much heat. kimberly |

The ones we have here almost year round- Sharwil and Kahaluu are absolutely flavorful and tasty and I for one would never put garlic or onion in my guacamole to cover the flavors. My guacamole recipe just has avocado, some sea salt and lemon- mainly to give the avocado a little juice to make it a little "dippier" ![]() aloha, Cea roast beans to kona to email farmers of Pure Kona |

Guacamole shouldn't be hot, it can have a little "kick"... but it should never be HOT. I'm someone who adds Tabasco and Worcestershire in tiny amounts (drops, not teaspoons), so *I* don't noticed their "flavor" - just their enhancement.
