All this avocado talk has me craving a bowl of guacamole!

Do you prefer lemon or lime?

garlic? or no?

smooth? or chunky?

Me, I keep it pretty simple. Avocado, very finely minced onion, fine diced tomato,
garlic, lime juice, cilantro, minced serrano, salt & pepper.

I prefer lime to lemon, always add some form of garlic, and like chunky better than
smooth.

I always start by making fresh salsa. If the meal calls for guacamole
you've *got* to have salsa, too. Chopped tomatoes and onion, pressed
fresh garlic, cilantro, lime juice, minced jalapeno peppers. If you
like it saucy, or if it's winter and the tomatoes are feeble, use lots
of the flavory stuff, just a few "fresh" tomatoes for texture and add a
can of crushed tomatoes in tomato puree for good tomato flavor.

Then I chunk up some ripe avocados, add a scoop (highly technical
measurement) of salsa, a little scoop of sour cream, mash it around and
taste. Add salt and/or lime juice as necessary. Cover with saran wrap
and chill for maybe an hour or so to let the flavors blend. I've seen
one guest rap another on the knuckles with the back of a spoon for
trying to steal the last bite of this off of a plate.

I like my guac mild.

Guac is supposed to be served cool. There are enough other hot/spicy dips.

Lots of cilantro! Peppers, but not necessarily serrano. Chipotle?

Some cumin and black pepper too. Ohterwise, yours is perfect.

Do people find that cucumber adds freshness to whatever you put it
into?

Either works but I like a little Meyer lemon, and not too
much at that.

I always put New Mexico (or similar) chili powder into the
guac.

I used two green onions. Too much. Would have loved tgomato but didn't
have any. Not enough salt in it, but that could be remedied.

Defo lime and plenty of it. I love it with a touch of sour cream as
well. I prefer mine with fresh minced garlic and sans clilies (but if
I had to put some in I would use a bit of jalepeno), fresh tomatoes as
well (and I don't like cilantro).

YUM! Chunkier the better.

I *really* wish that when folks make guac for more than just
themselves, that they would serve the very finely minced onion, fine
diced tomato, and *especially* the cilantro on the side. Maybe the
chilies as well.

Your recipe sounds good to me. Right now I am not in the mood for
anything hot, like serrano's or jalapeno's. The desire for heat comes

Because of my stomach, I can't make it very spicy. Just a little kick. Sometimes I
serve a little dish of extra serranos next to it for my husband and his brother.
I like to put fresh ground white pepper in it too, gives it a little extra something
without too much heat.

Guacamole shouldn't be hot, it can have a little "kick"... but it
should never be HOT.

I'm someone who adds Tabasco and Worcestershire in tiny amounts
(drops, not teaspoons), so *I* don't noticed their "flavor" - just
their enhancement. YMMV because hubby hates what I absolutely love.
