I didn't really want to cook tonight, nor did I have much time, so put this
together. It was actually pretty tasty. Cheesy Chicken and Rice Bake 1 can Campbell's Cheddar Cheese Soup 1 cup water 3/4 cup uncooked regular long-grain rice 1/2 teaspoon granulated onion 1/4 teaspoon granulated garlic 1/2 teaspoon freshly ground black pepper 1/2 teaspoon rubbed sage 1/4 teaspoon paprika 1 large skinless, boneless chicken breast Cut chicken breast into bite sized pieces and set aside. Combine all remaining ingredients, then stir in chicken pieces. Turn mixture into shallow 2-quart baking dish that has been coated with non-stick spray. Cover dish tightly with foil and baked 45 m inutes at 375°F. Let stand 10 minutes before serving. Note: This is a variation on one of Campbell's rcipes. Had to go to my aunt's funeral today 90 miles away. When I got back I only had a half hour to grab something to eat before I changed my shirt, put my suit jacket back on and went to Synagogue to be inducted as president of my Men's Club chapter. Put together a mixed greens salad and dumped a can of sardines on top, crumbled some gorgonzola on it and mixed up a quick vinaigrette, Had some pita chips on the side and some homemade peppermint ice tea. Pretty satisfying dinner. Jon |
