Default Half a smoked chicken

Bought a smoked chicken today and have turned half into risotto. Any
ideas for what I can do with the other half? I'd prefer warm dishes if
possible -- it's mid-winter where I am.

I like it all by itself so I am thinking... what about a cream hash?
Potatoes, onions, pieces of chicken, finished in oven with cream once the
basic hashing has been done on stovetop.

Smoked chicken is wonderful as the meat in a pot of bean stew. Smoked
turkey, too.

How about some smoked chicken quesadillas? I'm thinking grilled
onions, cheese of your choice, chunked smoked chicken on tortillas
with a nice salsa. Maybe two salsas so people could mix and match.
